Welcome Jessica Ellicott

While Edwina Davenport is an able cook her dear friend Beryl Helliwell is only capable of opening a tin of beans. She is not particularly adept at attempting to heat them. But Edwina has high hopes that a recipe as is this one with such a short list of ingredients may be just the thing to help Beryl finally learn to cook.

Despite Edwina is misgivings at the use of the popular American food product peanut butter, she is willing to try anything to correct what she sees as an incredible deficiency in her dear friends skill set. Cookies, or biscuits, as they are known in the United Kingdom are an item for which Edwina has a very soft spot. Try this simple recipe yourself and see if you do not agree that these are the perfect thing to whip up for a last-minute afternoon snack.

Ingredients

One egg
1 cup peanut butter
1 cup sugar
1 teaspoon salt
3 teaspoons granulated sugar

Preheat oven to 350°F. In a large bowl mix together the egg, the peanut butter, and the sugar. Roll 1 tablespoon sized portions of the dough into smooth balls and place approximately 1 inch apart on an ungreased cookie sheet.

Flatten balls with the back of a fork making a crosshatch pattern. In a separate bowl mix the salt and additional sugar until thoroughly combined. Sprinkle the cookies with this mixture.

Bake about 10 minutes or until the edges are golden brown. Place on a wire rack to cool. Enjoy with a glass of cold milk or a cup of tea.
