Blueberry Muffins #recipe @vmburns #giveaway

 VMBURNS: I'm currently working on my Baker Street Mystery book #6 and blueberries play a big role in this book. So, I need to test one of my recipes. I've made baked goods with blueberries before, but I am a bit heavy handed with my mixing, which doesn't work well with blueberries. Pretty much everything I've baked has come out blue. If you burst the berries, your baked goods will be blue. They still taste good, but the color change isn't appealing. A little bit of blue is unavoidable. Some of the berries will burst during the baking process, but my goal was to minimize the color bleed. So, this was my challenge. DON'T BREAK THE BERRIES!

For the first time EVER, my blueberries remained in tact. 




BLUEBERRY MUFFINS



Ingredients

  • 2/3 Cup of sugar, plus 2 Tablespoons for the top
  • 1 large egg
  • 1/3 Cup milk
  • ½ Cup melted butter
  • 1 ½ Teaspoons Vanilla
  • 1 ¼ Cup flour
  • 1 Teaspoon Baking powder
  • ¼ Teaspoon salt
  • ½ Cup Sour Cream
  • 1 Cup fresh blueberries

InSTRUCTIONS

  1. Preheat oven to 375*F. Lighly grease a muffin tin and insert muffin liners.
  2.  Combine sugar, egg, butter, milk, and vanilla in a bowl. Stir until well combined.

  3. Whisk the flour, baking powder, and salt in a separate bowl, then slowly add the flour mixture to the wet. Stir to combine, but don’t overmix.
  4. Stir in the sour cream and GENTLY fold in the blueberries.

  5. Pour the mixture into the prepared muffin pan, and sprinkle the tablespoon of sugar over the tops.

  6. Bake for approximately 25-30 minutes. Remove when a toothpick inserted into the center comes out clean.

Here at Mystery Lovers Kitchen I have for you a recipe for Stuffed Peppers done in the slow cooker! These are easy, tasty, and warmly comforting, and yet don’t heat your kitchen up on the hottest summer day. A win-win in my books.

But first, may I blow your mind for just a sec? Did you know that bell peppers are a FRUIT?? Yes, indeed they are. They are actually a BERRY. Say what??

I didn’t know that until I did a little poking around to find out why bell peppers are called bell peppers. Was there a Mrs. Bell? Did they look like a bell to someone? And then I got totally distracted by the fact that they are berries.

Anyhoo, bell peppers, a plant of Central and South America, were called peppers simply because that was the name given to most hot or spicy plants, and bell peppers, first called so in the 17th century because, yes, someone thought they looked like a bell.

Have you ever had stuffed peppers? Though it is thought that people have stuffed peppers since they first started cultivating them, the modern iteration of this dish that we all grew up loving – or, if you were like most kids, loathing – was in cookbooks as early as the 1890s.

A word about the peppers; it’s customary to use green peppers in this dish. In truth, green, red, orange and yellow peppers are all the same plant, but the red/orange/yellow color comes when the pepper ripens. When they are green and underripe they have a stronger flavor, with a bitterness that some think pairs well with the mild flavor of rice and ground beef. However, if you are catering to fussy palates, I would advise the more colorful peppers for the milder flavor profile.

For my dish I came across some pretty ones in the grocery store called Aloha peppers. They’re striped in reds and oranges and were irresistible.



Traditionally, stuffed peppers is a baked dish, and you could bake these; they will hold their shape better. But using the slow cooker renders them soft and easy to eat, and the aim here is to make a food like peppers more appetising to those fussy palates I just spoke of! These turn out delicious, oozy, cheesy and delectably fork-tender.




SLOW COOKER STUFFED PEPPERS



(Makes 4 large, or 5-6 smaller.

Ingredients

4 large or 5-6 smaller bell peppers – see instructions to prep (Use whatever colour you like!)

Pieces of the peppers when cap is removed, diced fine

1 small onion, diced fine

2 fat cloves of garlic, diced fine

¾ lb lean ground beef

1 cup cooked rice (I used Basmati)

8 oz cream cheese

1 cup grated Monterey jack cheese

½ tsp smoked paprika

½ tsp onion powder

Salt and pepper to taste


1 – Prepare peppers. Evenly cut off the cap of the pepper, discard the stem, seeds and membrane, then dice the left-over pieces of pepper. *Note; a serrated grapefruit spoon works great for taking the membrane out of the pepper!

2 – Fry the hamburger gently, scoop out of pan and set aside. If there is too much oil in the pan, discard it. Otherwise…

3 - Dice the onion and add it and the diced red pepper to the pan and sauté in the oils from the hamburger until onion is translucent and pepper is softened. Add the diced garlic for the last minute, and cook until soft.

4 – Add cooked beef, rice, cream cheese and grated cheese to pan and warm through until the cheese is melted.

5 – Stuff mixture into prepared peppers, patting down to fill every cavity, and place the peppers in a slow cooker, with a little water in the bottom. I like a ‘casserole’ style slow cooker, but whatever you have that the peppers will fit into will work fine.

6 – Cook on low for 3 hours, or until the peppers are cooked, but still hold their shape.


Serve!

These were absolutely delicious. You could alter the ingredients if you like to make a larger or smaller batch. Enjoy, my friends, while you read my Vintage Kitchen Mystery #13, Masher of Ceremonies!

A fundraiser for the local historical society nearly goes bust when someone fills the coffers with blackmail and murder . . .

DARYL WOOD GERBER: I’m so excited to be here. I had such a blast writing my latest release, MURDER IN A LAVENDER DAZE and can’t wait to share it with the world. I did a lot of research about aroma therapy. I learned more about mindful meditations, too. As for the main event, a happily divorced party, I came up with the idea when I was in Arizona doing a book signing at the Poisoned Pen. On my way there, I saw a pedal bus filled with happy young women pumping their legs while gleefully sipping beverages, and I wondered what they were celebrating. It wasn’t a bridesmaid contingency. No one was wearing a veil. I told my writing pals about it and asked for suggestions, and one of them said someone is getting happily divorced. Done! Nailed! Loved it! I told my editor the idea and she was totally on board.

If you’re not familiar with the Aroma Wellness Mysteries, it features a spa in the Courtyard of Peace located in Carmel-by-the-Sea, California. The owner also has a café and gift shop. At the gift shop, customers can browse wind chimes and essential oils and beautiful candles. At the café, they can dine on good-for-you food . . . that tastes good!

Emma owns the spa with her grandmother. Her cousin Sierra, who is like a sister to her, runs the café. She’s always trying to give Emma advice about what to eat.

This quiche, which is so simple that you can probably make it blindfolded—as long as you use a premade pie crust—contains kale. Now, I’m not a raw kale fan. It’s just a tad too crunchy for me, but when cooked, it’s delicious. And kale is good for you. It contains antioxidants that help prevent cell damage and may also help protect against cancer. You can also count on kale to help support the health of your eyes, your immune system, and, yes, even your heart. Last but not least, kale is filling and low in calories, so it can help you maintain a healthy weight.

Unless of course, you’re eating it in a quiche because, let’s face it, quiche has cheese, eggs, milk, and pastry, so . . . it’s not super low calorie, but you only need one slice—approximately 300 calories and 14 grams of protein!

Enjoy!



Kale Leek Mushroom Quiche

(Yield: 1 quiche, 6 servings)

2 large leeks, whites only 2 cups chopped kale

¼ cup shitake mushrooms, rinsed and diced 2 tablespoons olive oil 5 eggs

⅓ cup milk

½ teaspoon salt

1 teaspoon white pepper ½ teaspoon cayenne pepper 2 teaspoons prepared mustard

¾ cup grated Gruyère cheese 9-inch pie crust (regular or gluten-free)

Rinse leeks and slice off the green ends. Discard and use only the whites. Chop the whites. Sauté leeks over medium heat with the olive oil, about 3 minutes.


Add the chopped kale and diced shitake mushrooms, and sauté about 2–3 minutes more.



Remove from heat and allow the vegetables to cool slightly.

In a medium bowl, whisk the eggs, milk and spices. Mix in the grated Gruyère cheese.

Place kale, leeks, and shitake mushrooms in pie crust. Pour egg mixture over.

Bake in a 375 degree oven for 35–45 minutes.

Turkey Pot Pie @VMBurns #recipe

VMBURNS: What do you do when you have leftover turkey? You make Turkey Pot Pie. At least, that's what I did. I can only endure leftovers for 2 days, then I get bored. I knew there would leftovers after I got a great deal on a turkey, which was WAAY too much for one person. So, I adapted a recipe for Chicken pot pot.

I didn't have frozen mixed vegetables, but I had frozen green beans, and frozen lima beans, frozen corn, and fresh carrots. You can't tell from the picture, but I added the fresh carrots to the onions (before adding the other veggies), since they needed to soften. I probably could have added them at the same time as the onions. The beauty of this recipe is that you can use any vegetables you have and eliminate the ones you don't like. You'll notice that the green beans are long. Next time I'll cut them.

I used my KitchenAid chopper to shred the turkey. Next time, I'll probably chop it more than shred it. That way, I will have larger pieces of meat in each bite. The taste was still great, but I wanted the satisfaction of chewing bigger pieces.

Lastly, you'll notice the recipe calls for heavy cream, but there's no heavy cream in the picture. I was out. So, I improvised by mixing melted butter and milk. 



Turkey Pot Pie 


  • INGREDIENTS

  • 2 Cups shredded turkey
  • 1 Cup frozen mixed vegetables
  • 1 Cup heavy cream
  • 1 Sheet puff pastry
  • 1 Onion, chopped
  • 1 Clove garlic, minced
  • 1 Cup low-sodium chicken broth
  • 3 Tablespoons flour
  • 2 Tablespoons Olive oil
  • 1 Teaspoon dried thyme
  • 1 Tesaspoon dried sage
  • Salt and pepper to taste
  • INSTRUCTIONS

  • Preheat oven to 375 F and grease a large casserole dish.
  • Heat olive oil over medium heat and sauté the onions for 3-4 minutes. Then add the garlic and cook for an additional 60 seconds until fragrant.
  • Add the frozen vegetables and cook until heated through. 
  • Create a roux by adding flour to the mixture and stir continuously for 2-3 minutes.
  • Slowly whisk in the heavy cream and chicken broth. Simmer until slightly thickened, approximately 5 minutes. 
  • Fold in the shredded turkey and mix until well coated, and then transfer to the greased casserole dish.
  • Cover with thawed puff pastry, cutting slits for steam, and brush with an egg wash (if desired).
  • Bake 25-30 minutes or until the pastry is golden brown.

Virgin Sangria @vmburns #recipe

 VMBURNS: I was looking for a fruity punch to celebrate the holidays and stumbled across a recipe for a virgin sangria. I, of course, made adjustments and tweaked to my tastes. Feel free to do the same.

The original recipe I found used a Pink Lady Apple. I didn't have a pink lady, but I did have a red delicious. I thought the bright red skin would be great. I was wrong. I do NOT recommend the red delicious. The texture of the apple's flesh didn't hold up well. I LOVED the blackberries in the sangria. In fact, I eventually scooped them out and ate them with a spoon. My biggest adjustment came with the sparkling water. Initially, I used a plain sparkling water. However, on my second batch, I tried flavored sparkling waters and OMG was it tasty. I tried peach flavored and blood orange. Both were delicious. If you are going to drink this immediately, then I would recommend adding the sparkling water to your pitcher. Otherwise, I recommend waiting until you are serving the sangria/punch and just pour some sparkling water in the glass.





VIRGIN SANGRIA



INGREDIENTS

    • 1 Apple (I like Honey Crisp)
    • 2 Oranges
    • 1 Lemon
    • 1 Cup Blackberries
    • 1 Cup Sparkling Water
    • 3/4 Cup Apple Juice
    • 1 Cup Orange Juice
    • 3 Cups Cranberry Juice



    • INSTRUCTIONS
      1. Cut the apple into chunks. Slice the oranges, and cut the lemon in half, and slice one half of the lemon. Add all of your fruit, including the blueberries to a pitcher.
      2. Fill the pitcher with the apple juice, orange juice, and cranberry juice. Squeeze the juice from the remaining lemon half into the pitcher.
      3. Stir and place in the refrigerator to cool.


      4. Pour the juice into a glass about 80 percent full, then add the sparkling water to the glass.
