Shrimp with Red and Green Peppers, Kale, Black Olives, and Tomato #recipe from Essie Lang, author


It was one of those hot, summer nights and I didn't want to cook. Not a huge surprise. But I started thinking seafood and then, I was hooked.

I had a bag of frozen shrimp in the freezer, also, frozen kale. I've read that frozen kale retains the taste without the hassle of chopping, as in when it's fresh. So I always have some on hand and use it a lot, especially in stir fry.

What else was on hand? Grape tomatoes, a can of sliced black olives, a green bell pepper, and a fresh basil plant. Perfect.

So, while I started the rice cooking, I did a quick-thaw (in cold water) of the shrimp, warmed the wok, and went to it. I'm sorry I don't have exact measurements to share, as I was using what I thought would work. I also decided to add some sliced black olives at the last minute, so that's not included in the photos of the ingredients.

The result? Quite tasty and oh, so easy.


What you'll need: (serves 2)

shrimp, frozen or fresh
kale, frozen or fresh - if fresh then wash, remove the stem and dice
grape tomatoes - sliced in half
green pepper - diced
sliced black olives
fresh basil, chopped
1/4 tsp. red pepper or chili flakes 
olive oil for cooking



What to do:

1. Heat olive oil in wok or frying pan, using enough to cover the surface. When hot, add green peppers, tomatoes and kale. Stir frequently until peppers are softened and tomatoes are oozing. Add sliced black olives and stir.


2. Remove and set aside, keeping the mixture warm.

3. Add more olive oil and add shrimp, stirring constantly until light pink on outside and just past opaque on inside. Usually about 3-4 minutes.




 4. When done, add green pepper mixture back in, along with a 1/4 tsp red pepper flakes and combine. Add basil, stir in and then plate the rice first, topping with the shrimp. Add more seasoning if you like.

Holiday Salad recipe from author @ Essie Lang


I call this the holiday salad because it's the night-before-leaving town meal that you throw together to use up the remaining fresh food in your fridge. It could also be called, "everything-but-the-kitchen-sink" salad ... but that doesn't sound as appealing, does it?

So you have the picture.

I headed to the Left Coast Crime conference in Vancouver, B.C. early this morning and this was my meal last night. I did exactly what I described, using up items from the fridge and came up with, if  I do say so myself, a tasty although somewhat eclectic salad. I have to admit that the blueberries and mangoes were frozen, but I wanted a variety of color and tastes. To keep it light, I drizzled virgin olive oil over everything. You may prefer to use a vinaigrette or dressing. And, as the final touch, I added some potato chips just because I could.

If you don't like or have all my  ingredients, try your own and see what combinations you can come up with. I'm sure you'll enjoy the result, also.



What I used:


1/2 avocado, sliced
1/2 sweet red pepper, sliced
1/4 Granny Smith apple, sliced
3  grape tomatoes
3 pitted green grapes
frozen mango pieces
frozen wild blueberries
two Bocconcini
2 lettuce leaves
3 slice ham





What to do:

Very easy. Clean veggies and fruit, then slice, dice or just dish out. Have fun with the plating for a visually appealing colorful meal.



If you're at Left Coast Crime, please say hi. The same goes for Malice Domestic at the beginning of May. I'm not sure if I'll try the same Holiday Salad the night before attending. But I might.

Roasted Sweet Potato, Fennel and Lentil #recipe from Essie Lang, #book giveaway


In the perfect world, I would have checked my cupboards first, before starting this dish, to make sure I had green lentils on hand. Instead, I ended up using red ones. Not this this doesn't taste good, it's just that the green would have added more color. We eat first with our eyes, right?

Having said that, I ended up changing most of the other ingredients, too. So, this recipe that I got in a digest form from Bon Appetit, was an inspiration.

I love roasting veggies and I like playing with different combinations. So, I've added fennel to the mix. And instead of various herbs and spices, I chose to use a Milanese Gremolato olive oil I recently bought. Love the flavor!

And, I didn't have a harissa paste on hand so  I used powder, in the same amount.

This makes a tasty side dish for any meat or fish. Or, enjoy on its own with a green salad and dinner roll. It also works hot or cold.


What you'll need:

1 c. red lentils, rinsed
1 sweet potato, rinsed and sliced
1 pint grape tomatoes
1/2 fennel, sliced
3 1/2 tbsp. virgin olive oil
1 tbsp. harissa powder or paste
1 1/2 tbsp. white wine vinegar (or red)
1/2 tbsp. honey
pinches of salt and black pepper
fennel fronds for garnish



What to do:

1.  Preheat oven to 425F.  Rinse lentils then add them to water and cook according to package instructions. Drain and transfer to a bowl.

2.  Whisk half of the olive oil, half of the harissa powder, salt and pepper in a small bowl.

3.  Slice vegetables and halve the tomatoes. Add the olive oil mixture and then place the veggies on a baking sheet, on parchment paper.  Roast for 25 minutes, tossing once.


4.  Whisk vinegar, honey and remaining harissa in a bowl. While stirring, stir in the olive oil until emulsified. Add pinch of salt.  Mix half of this into the lentils and reserve the rest to drizzle over the plated meal.

5.  Serve with lentils on bottom and topped with veggies. Drizzle and then add fennel fronds.
