Salmon Stroganoff @MaddieDayAuthor #giveaway

MADDIE DAY here. It's cold in New England. Half a pint of sour cream in my fridge was waiting to be used, and I had a hankering for a hearty stroganoff. But I also wanted something a little lighter than beef or chicken liver. When I happened by a scant pound of fresh salmon in my local market, my cook's brain went to work. (Alas no fresh dill, and I forgot to pick up a lemon.)



Salmon Stroganoff

Ingredients

 


2 tablespoons butter

1 onion, minced

8 ounces mushrooms, cleaned and sliced

1 pound cooked salmon, flaked

1 cup sour cream

1 tablespoon dried dill or half cup chopped fresh

Salt and pepper to taste

Noodles or pasta of your choice

1 tablespoon olive oil


Directions

Cook the noodles or pasta according to the directions on the box. Drain, toss with a bit of olive oil, and set aside with the lid on.

While the noodles cook, melt butter in a skillet on medium and saute the onion until tender. Add the mushrooms and do the same.



Gently fold in the salmon, sour cream, and dill and heat until all is warm. 


Stir in the noodles and serve hot with a green salad.
