The dressing is also easily adaptable. If you'd like more tang, splash in more vinegar. I leave the amount of salt and pepper to your own taste, but don't leave either out, they provide good balance to the dressing. One last note, be sure to use fresh lemon juice (not bottled) for the very best flavor. Happy Maple Season...

You are so right. Real maple syrup has one ingredient: maple syrup. The artificial maple syrup, usually marketed as "pancake syrup," is corn syrup with maple flavoring and should never be substituted (never, never!) for real maple syrup. The real stuff costs more because it's absolutely worth it, a natural product with amazing flavor. No comparison. Not if you want to...(wait for it) eat with joy! :)
