Cooking With Friends: Beth’s Luchen Kugel (noodle pudding) plus a giveaway. by Ang Pompano

 





Ang Pompano:  I’m so happy to have my friend Beth Greenberg back in the kitchen with me today. You may remember her from our clam pie post last year.


Today she’s going to share another family favorite, her mom’s Luchen Kugel (noodle pudding), and I have a feeling you’re going to love it as much as I do.


If you’re not familiar with kugel, there are many versions, and you can serve it as an appetizer, main course, or dessert. It could even make a pretty terrific breakfast.


This version might loosely be called a Jewish take on mac and cheese. But believe me, it’s nothing like the stuff you get from a box. This is decadent in the best possible way, loaded with rich cheeses and noodles, and topped with a crunchy layer of cornflakes.


It’s the perfect dish for breaking a fast, celebrating a special occasion, or bringing to a party. One bite and you’ll understand why it’s become one of my new favorite comfort foods.


The Greenberg Family LUCHEN KUGEL


Noodle Pudding


INGREDIENTS



1 pound noodles

8 ounces cream cheese

5 large eggs, well beaten

½ cup milk

½ cup sugar, more or less, to taste

Salt, to taste

1 pint sour cream

1 stick butter

8 ounces American cheese, cubed

8 ounces cottage cheese

1 cup crushed corn flakes


DIRECTIONS


1. Cook noodles until tender; drain well and set aside.


2. Beat the eggs and add the sour cream.



3. Add the cottage cheese, cream cheese, sugar, and butter, then mix.




4. Stir in the cubed American Cheese



5. Mix the cooked noodles with the cream cheese, beaten eggs, sugar, sour cream, butter, American cheese, and cottage cheese.



6. Place the mixture in a 9 x 13-inch greased pan. Cover with the corn flakes.



6. Bake at 350°F for 1 hour, or until golden brown and bubbling around the edges.

  7. With the holidays fast approaching, I’ll share a holiday dish that has become a year round dish everyone loves. Whenever I take it to a gathering or fix for company coming, I’m always asked for the recipe and the pan seems to never hold any leftover for later. It’s a very different way to serve the green bean casserole that may just turn you this recipe for your dish this year.

    Green Bean & Shoepeg Corn Casserole
    Ingredients
    1 can French style green beans - drained
    1 can White shoepeg whole kernel corn - drained
    1 can Cream of celery soup
    1 ½ cup Grated cheddar cheese
    ½ cup Sour cream
    ½ cup Onion - chopped
    1 can Water chestnuts, chopped finely
    For Topping:
    1 roll Ritz crackers, crumbled - rolls are smaller now - use a bit more
    1 stick Butter – melted
    Directions
    Place the green beans into casserole dish.
    Top with the shoepeg corn.
    Mix all other ingredients except for the toppings. Pour on top of the corn layer.
    Mix the cracker crumbs and melted butter together and the top the casserole with the mixture,
    Bake uncovered for 40 minutes in a 350 degree oven.

    1. Thanks, Carol! I know what you mean. My wife, Annette, always loved her aunt’s frosting but could never quite duplicate it. She searched and searched, trying recipes from the Internet, until she finally found one on Pinterest that tasted just as she remembered. So don’t give up! That perfect cupcake recipe might still be out there waiting for you. Good luck with the search, and thanks for the book congratulations!

  13. I've made kugel a few times, but never added cheese (other than cottage and cream), so I'm definitely going to give Beth's recipe a try. It sounds like the ultimate comfort food! My other quick go-to is spaghetti and meatballs, or, if I can wait, meatloaf and mashed potatoes.
