As you may have read in the news, there is an outbreak of the cyclospora parasite. It is being found in raw fruits and vegetables, particularly bagged salads and berries, and can cause gastrointestinal issues. According to the CDC, one of the ways to avoid being infected is by cooking fruits and vegetables. Fortunately, there are lots of ways to enjoy summer's bounty by grilling, baking or cooking. Here are a few recipes from the blog to give you some ideas.
'Tis the season for zucchini and it is delicious in Leslie Karst's Zucchini Ratatouille, Leslie Budewitz's Zucchini, Rice and Cheese Gratin.
Green beans make a standout side dish in this recipe for Chinese Style Green Beans by Peg Cochran.
Or a medley of vegetables like Molly MacRae's Butter and Soy Glazed Vegetables.
Vegetables can be the star of the show in main course dishes like Lucy Burdette's Spicy Shrimp and Avocado Stir Fry and Vicki Delany's Vermicelli Noodles and Vegetables in Peanut Sauce.
And what is summer without some delicious fruits, which can be baked into cakes, pies and more. Strawberries make a statement in Cleo Coyle's Strawberry Syrup and who doesn't love peaches especially when baked into a peach pie like Maddie Day's.

Stay safe and healthy everyone!
