Roasted Apricot and Ricotta Toast, proving that you never know where your next meal is coming from! The combination of flavors is terrific, and this is quick and easy enough, with minimal prep, for a weeknight dinner.
Whenever I see lemon juice in a recipe, I cut it and add more if needed, as I often find the amount given too much for the tastebuds in my household, and of course, once it’s in there, that’s about all you’ll taste. Happily, lime juice doesn’t call for the same caution.
If you’d like a little heat, add a dash of cayenne or red pepper flakes to the shrimp after you add the coconut milk and lime juice.

Coconut Lime Shrimp with Cilantro Rice
For the cilantro rice:
1 cup jasmine rice
1/4 cup fresh cilantro, chopped
1 tablespoon lime juice
For the shrimp:
1 tablespoon olive oil
2 cloves garlic, minced
1 pound raw shrimp, peeled and deveined (thaw and drain if frozen)
salt and freshly ground black pepper
1/2 cup coconut milk
1 tablespoon lime juice
For garnish:
2 tablespoons fresh cilantro, chopped
lime slices or wedges
Start the rice, in a rice cooker or a pot on the stove.
Meanwhile, in a large skillet, heat the oil. Add garlic and cook approximately 30 seconds, until fragrant. Add shrimp and season with salt and pepper. Cook 2 to 3 minutes on each side, until the little darlings turn pink on both sides.
Stir in coconut milk and 1 tablespoon lime juice and simmer 2 minutes.
When the rice is ready, fluff it with a fork and stir in 1/4 cup chopped cilantro and 1 tablespoon lime juice.
Serve shrimp over the rice and garnish with fresh cilantro and lime. Spoon any extra sauce over the shrimp for extra creaminess.
Serves 4.
