Crab Appetizers @MaddieDayAuthor #giveaway

MADDIE DAY here, with another recipe from Murder at Cape Costumers, which releases next Tuesday!


Mac Almeida's mother Astra makes these yummy morsels for an appetizer at family Sunday dinner. I got the recipe from my good friend Lyndsie Reynolds, and I've made it several times for parties. Lyndsie called the app "Crabbies," which is how they're referred to in the book, but I worried about titling a recipe post like that, LOL!

Crabbies 

It’s easy to double the amounts. That way you can keep a bag of tasty bites in the freezer for a quick appetizer for gatherings or with a glass of wine while you wait for dinner to cook.

Ingredients


              

Package of six English muffins

5 ounce jar of Kraft Old English Cheese Spread (or 4 ounces fine-grated sharp cheddar cheese and 2 ounces softened cream cheese)

8 oz can of lump crab meat, well drained

1 stick of butter, room-temperature softened (doesn’t matter if it’s salted or unsalted)

1 tablespoon of mayonnaise

1 tablespoon of finely diced onion or shallot (I omitted this)

1 teaspoon garlic powder (if your butter is unsalted, you can use garlic salt)

1 teaspoon Lawry’s Seasoning or Old Bay powder

Pinch of regular or sweet paprika

Pinch of pepper

Pinch of salt if there’s none otherwise, as in the butter or garlic powder

Directions

Split English muffins in half (forking method is best to split as it leaves you with the nooks and crannies in the muffins).

 


Mix all the ingredients with a fork, except the crab meat. 



When combined well, fold in the crab. 



Spread over the 12 halves of muffins. 



Put in freezer for about 2 hours or until hard, which makes them easy to cut.

Cut each muffin into quarters.



Put in plastic container using parchment paper to separate layers of appetizer bites. Keep frozen until needed.

When needed, broil frozen bites for 5-7 minutes, depending on distance from broiler.  Keep an eye on them. Serve immediately.



Note: I forgot to take a photo of the crabbies I made on the white English muffins. I had extra crab mixture, and spread it on a few whole wheat English muffins, as shown in this finished appetizer picture.

  1. Or of the easiest appetizers I can make is Cranberry - Green Chile sauce served on a sliced sourdough baguette with cream cheese. Since cranberries can be found year-round, in the freezer section, you can make the sauce, which is like a thick cranberry chutney, a few days in advance. Then day of the party, slice the baguette, spread with cream cheese.and top with the pre-made sauce.

  3. One of my favorite appetizers to make and serve is cold boiled shrimp with lots of cocktail sauce. This appetizer couldn't be easier and is very popular!

  6. Thank you so much for the Crab Appetizers recipe! We love crab, but living so far in we don’t get to enjoy it much. By using the can crab, this would give us a fix with this delicious appetizer. We just might have to have it as our meal. LOL

    Jalapeño Popper are my favorite appetizers. I love experimenting with variations. My favorite find was wrapping it in bacon and grilling instead of the normal fried versions. My problem is having to limit myself so I can enjoy the main dinner while enjoying them elsewhere. At home, I can have a smaller main course in order to enjoy more appetizers. 😊

  11. Congrats on your upcoming release, Edith! Your recipe is like a blast from my past. I had a friend who made the crabbies all the time and I never got her recipe. We lost touch after moves took us to other parts of the state (this was pre-internet and cell phones). My mouth is watering just thinking about these yummy appetizers now!

  13. This recipe sounds wonderful. Taste testing would be involved while making them. My favorite to make/take are taco pinwheels, chicken, taco seasoning, cream cheese, and shredded cheese wrapped in tortillas and sliced. There are other variations, too. Egoehner(at)roadrunner(dot)com
