VMBURNS: Nothing says summer like fresh fruit. Many of you may know that while I was born in the Midwest, I now live in Northern Georgia. Georgia is known as the Peach State. If you're driving around Atlanta, you'll be amazed (and a little confused) by all of the streets referring to peaches. Peachtree St., Peachtree NE, Peachtree Circle, etc., etc. Peach season starts in Mid May down here and markets and roadside stands are overflowing with peaches. Seeing so many peaches makes me start to look for recipes to take advantage of this abundant fruit. Restaurants abound with peach cobbler, but I've never been a fan of cooked peaches. But, I do love peach flavored beverages. Peach tea, peach lemonade, and peach margaritas. I fired up the grill and made grilled peaches with ice cream. It was delicious.

LUCY BURDETTE: Valerie, I love peaches so much but we won't have local fruit until late August. I can't wait! We did get our first batch of cherries last week. I will look forward to making this cherry galette again this summer!

MADDIE DAY: I also adore fresh peaches. I grew up in the Pasadena area of California with a yellow and a white peach tree in the backyard. We also had lemon, fig, guava, and apricot trees, all planted by my parents when we moved in when I was four, plus boysenberry bushes.
Alas, a late-in-life allergy means I can eat cooked-only stone fruit like peaches and apricots (and apples and pears and cherries, oh no). Luckily, berries are fine, so the allergy doesn't rule out an Ode to Summer Fruit Tart!
Local strawberries and raspberries are already ripening at my local farm stands, and the blueberry bushes I planted ten years ago are laden with baby berries. I might try a summer fruit Sangria!

KIM DAVIS: I love this time of the year when spring and summer fruits flood the stalls at the farmers' market! Plump, juicy cherries, raspberries, and blackberries are nearly impossible for me to pass up, along with peaches, nectarines, and apricots. I often come home with too much fruit and end up having to share with others... but I get no complaints. In all honesty, I typically eat the fruit straight from the container (after washing, of course) perched over the sink to catch the juicy dribbles. The only summer fruit (well, I guess it's really a vegetable) that I cook into desserts is rhubarb. Every early summer when we'd head to Illinois to visit my husband's family, my mother-in-law would greet us with a Homemade Rhubarb Pie... it was the BEST! And I'd often finish the last piece for breakfast the next day. Fortunately she taught me how to make it but hers still always tasted better... I think it was the love she poured into it.
In summers past I'd also visit my sister in Oregon where blackberries grew wild along just about every country road. When I'd visit, she'd often make this Busy-Day Blackberry Cobbler, a recipe passed down from our mother. It's an easy and delicious way to use up an over abundance of fruit!

ANG POMPANO: Valerie, my favorite fruit that signals the start of summer may surprise some people because it’s sweet corn. Botanically speaking, corn is actually a fruit because it develops from the flower of the corn plant. Corn somehow manages to span three worlds at once: fruit botanically, vegetable when young, and grain when mature.
But I’m wandering off into the cornfield here.
I live in a town that still likes to think of itself as an agricultural community, so farm stands selling corn picked that very morning are only minutes away in every direction. For me, there’s nothing better than peeling back the husk of a freshly picked ear of corn, stripping away the silk, giving it a quick rinse, and eating it raw right off the cob. It beats dessert every time.
My recipe is simple. I cut the raw kernels off the cob and toss them into a bowl with chopped tomatoes, cucumber, basil, olive oil, salt, and pepper. It’s nothing fancy, but to me it spells summer.

LESLIE BUDEWITZ: Here in NW Montana, we're a ways away from local fruit. My own garden gives us rhubarb, apples, and raspberries, and we're planting a new strawberry patch right now, as ours fell prey to voles. Cherries grown on the shores of Flathead Lake are short-lived and much-loved, here and beyond, though our home is in the woods at the base of the mountains and cherries won't grow in our yard. I grew up eagerly anticipating my mother's Rhubarb Custard Pie. I shared that recipe in Treble at the Jam Fest, the 4th Food Lovers' Village Mystery. (Kim featured it a few years ago on her blog, with photos pretty enough to make me want to eat the screen.) As a proud member of the People of the Pie, I believe you can never have too much of a good thing, so I put this Rhubarb Sour Cream Custard Pie to the test and it succeeded with flying colors!
Or try your rhubarb in a muffin. I created these Rhubarb Almond Muffins a few years ago, inspired by a Raspberry Almond Muffin at my favorite local cafe.
I'll leave you with a photo of a recent discovery, on our Great Spring Road Trip -- 3,500 miles, 7 states, 4 national parks -- the Prickly Pear Margarita. Now, prickly pear does grow in central Montana, though it's far more common in the southwest, and we discovered prickly pear margaritas and lemonade in New Mexico. I snared a bottle of juice and we made margaritas last weekend -- gorgeous and tasty! (The recipe came from the maker, often the best source.)
Cactus is a fruit, right? Cheers!

PEG COCHRAN/MARGARET LOUDON: I love peaches, but like Lucy, ours won't be available locally until August. Until then, the ones in the supermarket are hit or miss. Right now cherries are in the store. Michigan is known for its cherries. As a matter of fact, Traverse City's airport is known as Cherry Capital Airport! And that reminds me, it's time I made this cherry cake again!

LESLIE KARST: Okay, I'm gonna be a little boring and go with peaches, like so many of my other Kitchen cohorts. But I mean, c'mon--there's nothing in the world like a fresh summer peach, right?
The peaches here on coastal California are no where near as good as Valerie's Georgia peaches, but we do get delicious ones from the interior of the state where it gets good and hot in the summer. And this is one of my favorite things to do with them: Peaches and Cream with a French-Italian Twist. A simple and delicious dessert which lets the fruit shine, it's the perfect finish to a summer meal.

MOLLY MACRAE: Beautiful
ripe berries are summer to me, beginning with strawberries in early June. When
we lived in upper east Tennessee, we’d go down the road to pick gallons of them
at the strawberry farm. We took them home, ate as many as we could and freeze
the rest. When our older son was 2 1/2, he and I picked strawberries the day
our younger was due. Maybe that’s why they’re both so sweet.
For blackberries we didn’t need to go anywhere at all. We had oodles of wild ones along the edge of our meadow. There’s nothing like a ripe blackberry, warm from the sun and straight off the cane. There’s nothing like blackberry cobbler, either.
Friends of ours had raspberries (and generously shared them). “Raspberry” was one our younger son’s first words (reduced to one syllable and more like a secret language).
In July, we’d cross over from Tennessee to North Carolina at Iron Mountain Gap and pick blueberries in Buladean—always heeding the warning to watch out for bears. Here are recipes for BlueberryPie with a Cornmeal Crust and BlueberryLemon Bread Pudding. And here’s a fresh fruit salad topped with gorgeous raspberries made by our younger son, still into raspberries at 43.

DARCI HANNAH: For me nothing says summer like a slice of cherry pie! Although I now live in Michigan where we grow lots of delicious tart cherries, as a kid we always spent our summers in Wisconsin, on the Door County peninsula. Door County is also known for growing cherries, and when spring hits the orchards come alive with beautiful pink cherry blossoms. It's a truly magical sight to see. Then, in July the cherries ripen, and for me there's no better time of the year. Our family used to pick our cherries in the orchard, and when we'd come home my mom made her special Door County cherry pie. It's delicious served warm with a scoop or two of vanilla ice cream. VICKI DELANY: My goodness what a fantastic selection of fruit, fruit drinks, fruit desserts, and pure yummy fruitie goodness. Right now in the farm country of Southern Ontario rhubarb is in and strawberries soon to come. Strawberry rhubarb bars are one of the things I love to make the most when everything is in season. In fact, it's so much my favourite, it was my very first recipe as a regular cook in the kitchen!

CLEO COYLE: On hot summer days, I love to whip up this VIRGIN SANGRIA, which is not only refreshing and hydrating but also uses some of my favorite summer fruits (watermelon, strawberries, and peaches), although you can adapt the recipe to your own favorites.
Why virgin? While a white wine sangria is delicious, on a workday, I prefer that my fingers hit my laptop keyboard rather than my forehead, which means no firewater until the day is done. A virgin sangria is also a good idea for households with kids because it can be converted into an adult beverage at the time it's poured, which means one pitcher can serve drinkers and non-drinkers alike.

DeleteI love all summer fruit! When I was a child, the kick off to summer vacation was buying the "end of school" watermelon. How we savored that first sweet and cool melon along with the freedom of summer vacation! Now I would say that fresh cherries signal the start of summer for me. Usually I enjoy fresh fruit items on their own. I do love fruit cobbler with either a pastry crush or a crumble style crust.

DeleteThe first fruit available here is strawberries. While I love them, peaches will always hold first place – both in taste and memories.
ReplyDeleteA friend introduced me to a huge peach orchard when I was in my 20’s. So many wonderful memories in that orchard from finding out you shouldn’t pick peaches in the rain (because when damp blemishes don’t show up) to my dad entertaining my daughter with a jug of water and a pocket knife as they walked through the trees sampling to see if they were ready yet.
One of my favorite ways to have any fresh fruit is with this recipe, which can be adapted to any of them. Hubby’s not a big fruit lover (I know gasp), but he loves this dessert.
FRESH PEACH DELIGHT
The magic of his favorite dessert is that it is versatile for whatever fruit is in season at the time. To change it up with different fruit (strawberries, blueberries or peaches), you just change the flavor of jello or use your own homemade pie filling.
Here's the recipe using peaches. It was the original recipe my Mom started using decades ago.
Ingredients for crust
1 cup flour
1 tablespoon sugar
½ cup butter softened, 1 stick
¼ cups finely ground pecans
Ingredients for creamy layer
1 cup sugar
8 ounces of cream cheese, softened
9 ounce tub of cool whip (As you can see old recipe. You can use the small tub or part of big tub. I usually use big tube and add a bit more than half of it.)
Fruit layer
3 cups of fresh, sliced peaches
Top layer ingredients
1 cup sugar
2 tablespoons of cornstarch
1 ½ cup of water
1 package of peach flavored jello (3 ounce size)
Directions
Mix crust ingredients until well blended. Spread in 9x13 pan. Bake in a 350 degree oven until light golden brown. Cool.
For creamy layer cream the sugar and cream cheese until smooth and blended. Fold in cool whip. Spread over cooled crust.
Top with the sliced peaches and put in refrigerator
For top layer combine the sugar and cornstarch. Stir in water. Cook until thick. Stir in jello until thoroughly blended. Cool. (I often speed this up by placing pan in sink with water and ice. Constantly moving pan around while stirring so it doesn’t just cool on mixture closest to the pan. You don’t want it to set – only getting thick or it won’t spread properly.) Spoon glaze over peaches covering them completely. If they stick up, take your finger and push them down into the cheese layer. If you don’t, the fruit will turn dark.
Chill until serving.
One variation to this are to use fresh strawberries cut in half (enough to cover the creamy layer) and use strawberry jello.
Another variation is to use a layer of blueberry pie filling instead of the fruit and jello layer. I make my own blueberry pie filling for this using fresh picked fruit.
Blueberry Pie Filling
2 cups sugar
5 tablespoons cornstarch
2 cups water
8 cups of fresh blueberries.
Stir together the sugar and cornstarch in a saucepan. Wisk in the water until smooth. Stir in the blueberries and bring to a boil. Boil stirring constantly for 2 minutes. Remove from heat and cool.

Several fruits are on my summer list - gooseberries (when I can find them), blackberries and then the peaches from our tree. One of my favorite ways to fix the peaches is to put peach halves on a low heat grill cut side down until lightly grilled with marks on them, flip them over and let them cook until slightly soft and the cavity fills with peach juice. Best served with a scoop of vanilla bean ice cream.

Mix all ingredients together except for fruit, turn into 9in baking dish and put fruit on top. Bake at 375 for 35-45 min

DeleteMy favorites are trawberries, rhubarb, peaches, and watermelon. Our rhubarb is slow and small this year between the late cold and the deer eating the leaves (yes, should be poisonous but the deer here eat anything) but still hoping to get at least some salad made. We usually have peaches off our tree ready in August but looks like we're not going to get any this year. Again, I think it was having the weather so cold so late and fluctuating so much. We got tons of peaches the last couple years so might just be having an off year too. At least we have plenty canned and frozen.

DeleteI used to just use a simple syrup of 1 tablespoon each of lemon juice, lime juice, orange juice, and sugar to pour over my fruit salads when I made them. The acidity helped keep apples from turning and gave a little flavor. I also like marinating my strawberries in red wine vinegar and sugar, then chilling and served with whipped cream. DeleteStrawberries are definitely my favorite. I remember my elderly neighbor always sharing berries with little me from her plants that grew between our 2 yards. Also, my then boyfriend ( now husband of many years) packed a cooler full of all sorts of goodies including all sorts of fresh fruit for our day trip to Warren Dunes in Michigan. It was wonderful, but the proposal was better.

ReplyDeleteSummer fruits : so many to choose from . When we bought our first house in Wisconsin it came with a cherry tree . I made lots of mini cherry cheesecakes to share . Although I no longer have any fruit trees , I still love the fresh fruit we can get in the summer here in MN . Watermelon and cantaloupe from our Farmers market , blueberries , strawberries, blackberries and raspberries . I love having our four local grand children over as they are all fresh fruit monsters ! Oh and so many ways to make delicious desserts from sour cream rhubarb pie to a wonderful freshly made blueberry pie . Uh oh , there goes my diet .

DeleteLOVE summer fruits ... watermelon, cherries, peaches, blackberries, et al. My favorite "recipe" is fruit compote. Start with a deliciously ripe cantaloupe and scoop out melon balls. Add other fruits of your choice ... We usually add strawberries, kiwi and blueberries. Add a can of canned peaches, INCLUDING the juice. (Prefer the ones canned only in natural juices.) Taste and sprinkle a little powdered sugar on it if you want it sweeter. Wonderful as a salad, or served over vanilla ice cream as dessert. As is, suitable for the whole family. But if you want a little something extra for the adults ... add a bit of brandy. (I live in Wisconsin, after all ... )

ReplyDeleteBlackberries, cherries, watermelon, raspberries & strawberries.
I like all but watermelon with a sprinkle of of sugar & whip cream. Watermelon I like plain (unless it needs a bit of sugar)
Strawberries I chop, mix with equal amounts of strawberry ice cream & whip cream, then spoon that into a hollowed out either angel food cake or sometimes pound cake. Place the top back on & freeze.
Or just mixed the berries with equal amounts of ice cream of choice & whip cream. Chunk up an angel food or pound cake & mix gently together, freeze & eat.
Either way most yummy

DeleteSo many of these recipes sound fantiastic! I love summer fruits and look forward to them each season. While I do love peaches and cherries, it is watermelon, blueberries, and strawberries that really shout 'summertime' for me. I love going to the local U-Pick farms for blueberries and strawberries. One of my favorite recipes to make for summer is Lemon Blueberry Cake.
ReplyDeleteLemon Cake Recipe:
1 cup granulated sugar
2 lemons (zested and juiced)
1 cup whole-milk
2 large eggs (room temperature)
1/2 cup olive oil
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup powdered sugar (sifted, plus more as needed, optional)
Blueberry Mixture:
4 cups fresh or frozen blueberries (if frozen, do not thaw)
½ cup granulated sugar
Lemon zest
1 teaspoon vanilla extract
¾ cup unsalted butter (melted)
Preheat the oven to 350°F.
Spray an 8x8-inch baking pan with nonstick cooking spray, then line with parchment paper, leaving a little excess hanging over on all four sides, then set aside.
For the Lemon Cake:
Combine the granulated sugar and lemon zest into a large bowl.
use your fingers to massage the zest into the sugar until the zest started to melt and the mixture is fragrant (about one minute).
Add the milk, eggs, oil, butter, and 3 tablespoons of the lemon juice. Whisk until smooth.
Add flour, baking powder, salt, and baking soda, folding the dry ingredients into the wet ingredients.
In separate large bowl, carefully combine blueberries, sugar, lemon zest, and vanilla.
Spread the blueberry mixture evenly into the pan.
Pour cake mix over blueberries and spread evenly.
Bake for 45 minutes or until top is golden brown and the blueberries are bubbly.
Let cool for 10-15 minutes before serving.
Vanilla ice cream is a good pairing.

Our local supermarket sells berries year round, so strawberries, blueberries, blackberries, and raspberries are no longer exclusively a summer fruit. Peaches, though, are seasonal, so peach season and summer are synonymous. lroth(at)pcext(dot)com

Delete3 cups halved or quartered strawberries
1 cup shredded Monterey jack cheese
¼ cup very thin slices red onion – a mandoline works great for this!
¾ cup Candied Pecans (or your own favorite candied or roasted nuts)
Sweet Red Wine Vinaigrette
Instructions
In a large serving dish or salad bowl, toss together all of the lettuce, plus about three-fourths of the strawberries, cheese, and onion. Then scatter the remaining one-fourth of the strawberries, cheese, and onion over the top.
Sprinkle with Candied Pecans.
Serve with Sweet Red Wine Vinaigrette on the side, for people to add as little or as much as they like to their own portion,

I call it the never-ending rhubarb plant. We give it away and make everything we can think of with it, and still it keeps growing. I will definitely try making Leslie's Rhubarb Sour Cream Custard Pie!! My very favorite summer fruits are apricots, nectarines and peaches. We eat them every day for breakfast, and make jams with them. Our apricot tree produced a measly 4 fruits this year (2 years old), in contract with last year when we had oodles of them. When I lived in northern New England a neighbor introduced me to the simple goodness of fresh strawberries dipped into sour cream(or creme fraiche) then dipped into brown sugar - so very easy/yummy. Now in living in PA, we like going to New Jersey for both the road-side stands and the pick-your own farms. Thanks for your generous offer, hope you guys get to enjoy your summer.
