Chocolate (Cottage Cheese) Ice Cream with Brownie Crumble #recipe Kim Davis

From Kim Davis:

With summer in full swing, my thoughts turn to desserts that don’t require baking. Ice cream is a go-to favorite and not only satisfies my sweet tooth but imparts a nice chill to counteract the outside temperatures. However, as much as I love ice cream, my cholesterol levels (darn those family genes!) don’t allow me to indulge nearly as often as I’d like unless I want to resort to taking medication. Last year I started seeing a trend on Pinterest where cottage cheese had a starring role in every dish imaginable, from savory to sweet alike… and found a cottage cheese dessert cookbook, which I purchased. (Cottage Cheese Dessert Cookbook by Kenzie Akers.) The recipe I’m sharing today is adapted from the cookbook, and while I felt there were several changes that needed to be made to the original, my final version proved to be utterly decadent and received high praise from my taste testers. It’s a good thing I keep several containers of cottage cheese in my fridge because I’m craving another batch of this frozen treat!

Chocolate (Cottage Cheese) Ice Cream with Brownie Crumble

Ingredients

Brownies:

1/2 cup almond flour
1/2 cup cocoa powder
2 tablespoons instant chocolate pudding mix
1/4 to 1/3 cup maple syrup
2 tablespoons peanut or almond butter
1/8 teaspoon sea salt

Ice Cream:

16 ounces cottage cheese (I used the low-fat version)
3 tablespoons honey
1/3 cup pure maple syrup
1/4 cup cocoa powder
2 tablespoons instant chocolate pudding mix
1 teaspoon vanilla extract
Pinch of salt

Instructions

Brownies:

In a medium-sized bowl, mix all the ingredients (starting with just 1/4 cup maple syrup) until it easily clumps together. If it appears too dry, add additional maple syrup, 2 teaspoons at a time, stirring well after each addition. Using clean hands, press the mixture into clumps. Cover with plastic wrap and set aside.

Ice Cream:

Mix all the ice cream ingredients in a blender until smooth and creamy, scraping down the sides of the blender as needed. The mixture will be very thick starting out. Alternatively, you can use a handheld stick blender.

Refrigerate the mixture for at least two hours until well chilled.

Add the cold mixture to an ice cream maker and process according to the manufacturer’s directions.

Once it reaches soft-serve consistency, transfer to a freezer-safe container. Gently fold in 3/4 of the brownie mixture, reserving the remaining mixture. Seal the container and freeze for 4 hours, or until desired consistency is reached. Crumble remaining brownie mixture over each bowl of ice cream right before serving.

If you don’t have an ice cream maker, you can, alternately add the ice cream mixture to a freezer-safe container. Gently fold 3/4 of the brownie mixture into the ice cream. Cover and freeze for at least 5 hours or overnight. The longer the ice cream is frozen, the harder it will become. If frozen overnight, allow to sit at room temperature around 10 minutes before scooping.

  1. Thank you so much for the Chocolate (Cottage Cheese) Ice Cream with Brownie Crumble recipe! Sounds utterly delicious and I will be trying it soon. We love homemade ice cream year round, but summer time is tops. Living in a hot and humid area, something cold is just what the doctor ordered to cool down. In the summer time, we enjoy vanilla ice cream with whatever fruit is in season folded in. Or I've made an ice cream topping using the fresh fruit that's been frozen to drizzle over the vanilla ice cream. We also love the homemade orange and pineapple sherbet like my mom made years ago. It's super easy and uses few ingredients, which are usually on hand.

    1. I don't think I've ever had spumoni before. I may have to tear myself away from chocolate and try it one of these days :)

  3. Thank you so much for sharing this creative and no doubt delicious ice cream dessert! My afvorite dessert is ice cream, and my favorite is Apple crumble, or peach cobbler...a couple of years ago the stores offered Banana Split flavors, which became my fvaorite at the time, but I have not seen it since...I am so intrigued by this recipe and just have to try making it. So far I have so many of your recipes that are "keepers", and surely this one will be added to that list! I hope you enjoyed your birthday, and that you continue to celebrate each and every day! JOY! 7. Love homemade (or any to be honest) ice cream, except plain chocolate. Not sure why because I love chocolate anything else. My favorite ice cream is either anything with caramel, but if it has cherry or mint, count me in! Have been seeing more of the cottage cheese ice cream recipes so will have to give one a try soon.

    1. Oohh caramel is so yummy in ice cream and I'll have to say I love a good salted caramel dessert if I feel like switching it up from chocolate.

  8. Cottage cheese and chocolate? I don't know. But it sort of sounds intriguing.

    1. With the cottage cheese blended smooth, you don't even realize it's used. It lends a bit of saltiness to the ice cream and the chocolate flavor is quite strong which covers up any hint of cottage cheese. I was drawn to trying it because it's low-fat and I really do have to avoid cream and heavy cholesterol foods...sadly :)

  9. This is fascinating, Kim! I love cottage cheese, and eat it most days for lunch, either in a salad or simply with sliced tomatoes.

    1. We're big fans of cottage cheese as well and those big tubs of it at Costco don't last very long in my house :)

  10. My favorite flavor of ice cream? Almost any kind lol. The only ice cream that I ever had that was just okay, was a mint chocolate chip at some museum cafe that wasn't the typical kind. Instead of green, minty tasting ice cream it was vanilla with real mint leaves and chocolate chips.

    1. Surprisingly I've never been a fan of mint chocolate chip ice cream... even the brands that use a ton of chocolate chips! Aside from that, I don't think I've ever disliked any flavors I've tried either :)
