I'm beyond excited to share my inaugural post as a permanent member of Mystery Lovers' Kitchen today! This blog has long been one of my favorites to visit with the tempting recipes shared by the members and finding new books to add to my TBR pile. This first post also coincides the day before the audiobook release of Essentials of Murder, the first book in the Aromatherapy Apothecary Mysteries. So to celebrate, I wanted to come up with a recipe that embodies the spirit of the book by using lavender. And since it's a milestone blog post and a celebration, I decided to up the fun by turning the lemon-lavender cookies into sandwich cookies with a lemon-lavender buttercream.
Lemon-Lavender Sandwich Cookies
Makes 8 3-inch sandwich cookies
Ingredients
For the Cookies:
2
cups all-purpose flour
1/2
teaspoon baking powder
1/4
teaspoon salt
2
teaspoons culinary lavender*
1
cup plus 1 tablespoon granulated sugar, divided
Zest
of 1 lemon
1/2
cup unsalted butter, room temperature
1
large egg
1
teaspoon vanilla extract
1/4
teaspoon lavender extract
Coarse
sparkling sugar, optional
For the Lavender Buttercream Filling:
1/2
cup unsalted butter, room temperature
2-1/4
cups confectioners’ sugar
1-1/2
teaspoons culinary lavender, finely ground*
1
tablespoons lemon juice
1/2
teaspoon vanilla extract
1/4
teaspoon lavender extract
Gel
or paste purple food coloring (optional)
Instructions
For the Cookies:
Preheat
the oven to 350 degrees (F). Line two baking sheets with parchment paper and
set aside.
In a
medium-size bowl, whisk together the flour, baking powder, and salt. Set aside.
Using a
mortar and pestle (or a clean spice/coffee grinder) grind the 1 tablespoon
sugar with the lemon zest and lavender, until the mixture resembles wet sand.
Add the lemon and lavender mixture to the bowl of a stand mixer along with the remaining sugar and the butter. Beat together until light and fluffy, about 2-3 minutes.
Add in the egg, vanilla and lavender extracts, and mix until fully incorporated. Scrape down the sides of the bowl as necessary.
Gradually add the dry ingredients to the butter mixture, mixing just until combined. Be careful not to overmix.
Cover the
dough with plastic wrap and refrigerate for 30 minutes.
On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Using a round cookie cutter, cut out the cookies and place them on the parchment-lined baking sheets. Reroll the scrapes no more than twice, and repeat.
Refrigerate the cut-out cookies for ten minutes.
If using, sprinkle the coarse sparkling sugar over the tops of the cutout cookies.
Bake for
9 to 11 minutes, or until the edges are just starting to turn barely golden.
Rotate the baking sheet half way through baking. Remove from the oven and allow
to cool for five minutes, then remove to cool completely on a wire rack.
For the Lavender Buttercream Filling:
In the bowl of a stand mixer, whip the butter until creamy.
Gradually
add in the confectioners’ sugar, a little at a time, and mix until fully
incorporated.
Grind the
lavender into a coarse powder using a mortar and pestle or a spice grinder.
Add in the
ground culinary lavender, lemon juice, vanilla and lavender extracts. If using,
add gel or paste purple food coloring, a tiny bit at a time, until desired
shade is reached. Mix the buttercream thoroughly between each addition of
color.
If filling is too thick, add additional lemon juice 1/2 teaspoon at a time, whipped well after each addition, until desired consistency is reached.
Continue
to whip the mixture until light and fluffy, about 2-3 minutes.
Transfer
the buttercream to a piping bag fitted with a medium-sized star tip. Or you may
use a spatula to spread the buttercream on the cookies.
Assembling
the Cookies:
Once the
cookies are completely cool, pipe a generous layer of lavender buttercream onto
the flat side of half the cookies.
Place
another unfrosted cookie on top, flat side toward the buttercream, pressing gently
to create a sandwich. Repeat with remaining cookies.
Note: *Be sure to use culinary lavender or, if using from your own garden, lavender that hasn’t been treated with pesticides.

ReplyDeleteWskwared(at)yahoo(dot)com
Wow, you are multi-coordinated to be able to do both at the same time! Good luck in the contest!
DeleteCongratulations on becoming a permanent member of Mystery Lover's Kitchen! It's the place I head first thing each morning. Without a doubt, you will be a fabulous addition with both recipes and books.
ReplyDeleteThank you for the fabulous Lemon-Lavender Sandwich Cookies recipe, which sound divine.
I'm not an audio book listener. Most of my book reading is when I'm in the company of hubby while he's doing something else. That makes having an audio disruptive to him. The times I'm by myself, meaning he's outside doing yard and garden work, is when I'm doing chores inside.
Not entering the contest since I've been blessed to have already read this fabulous book. <3

ReplyDeleteThank you for the warm welcome, Marcia! I'm delighted to be on TWO cooking/baking blogs now and am glad you enjoy them both. Yes, it's good to do what needs to be done to keep from being a distracted driver. Kudos for recognizing it and good luck in the contest!

DeleteThank you, Carol, I wish I could share some! I think it takes a bit of "practice" to learn to listen to audiobooks so your mind doesn't wander all the time. At least today's technology makes it easier to skip back in the story to pick up where you need to be :)
DeleteI have never listened to a book. Lindaherold999(at)gmail(dot)com
ReplyDeleteThanks for stopping by, Linda, and good luck in the contest!
DeleteWelcome! Loved this book! Are there more to come? The cookies look great. I'm not a big audio book person, I'm too easily distracted!
ReplyDeleteThanks for your kind words, Lori! And yes, I'm happy to say there will be at least 2 more books in the series, with the next one releasing later this year. It got a bit delayed due to a couple of family emergencies that impacted the publisher.
DeleteI am one of the weird ones who does not listen to audio books. I just feel like I can't concentrate on a book unless I am actually reading it.
ReplyDeleteSorry...my email address is jyates154@gmail.com
DeleteI don't think you're alone in finding it hard to concentrate on audiobooks. It took me a while to get the hang of it, but eventually I got hooked on them. Plus as my eyes age, they were getting too fatigued to spend all day on the computer and then read books during the evening for any length of time.
DeleteThe book sounds like a great read! I LOVE the lemon-lavender cookies...they look so pretty and sound delicious! Would love a print copy. ladyofshalott03(at)yahoo(dot)com. Ty!
ReplyDeleteThank you, Dawn! The lemon and lavender is a lovely combination... wish I could share some with everyone!

Thanks for stopping by, Dianne! The lemon and lavender combination is quite delicious and I've found that lavender is becoming quite a popular ingredient in some dishes now. Good luck in the contest!

ReplyDeleteThank you, Bonnie! I know the Hoopla library app carries the ebook version, but you may need to ask your librarian to order a print copy. Good luck in the contest!

ReplyDeleteanitalklaboe@aol.com

Thank you, Nancy! I'm like you... I like to "read" my stories via all the methods offered, depending on what time of day it is and how busy I am. Oohhh... lavender syrup in coffee... sounds utterly delicious!
DeleteI have tried to listen to audiobooks but I haven’t found a narrator that can keep my attention.
ReplyDeletetiggercat24alisha@yahoo dot com
Thanks for stopping by, Alisha! I'll have to admit some narrators are better than others. Good luck in the contest!
DeleteI love to listen to audiobooks when I'm snuggled up on my couch, it's raining outside, and I have nowhere else to go. wifeofanubis321@gmail.com
ReplyDeleteSounds like the perfect time and place to listen to a book! I'm generally multitasking when I listen and am afraid I'd fall asleep if I sat down, lol. Good luck in the contest!

Thanks, Libby, it's nice to see you here! And good luck!
DeleteI also listen when cooking or folding laundry
ReplyDeleteThanks for stopping by, Kimmy! Audiobooks definitely make chores a lot more enjoyable :)
DeleteI don't like audio books. I don't do any task long enough to listen to much of the book, and I like to read the print. Although I prefer print books, I do read e-books. Sometimes, that is the only way to get a story I want. Thanks for the chance. The book sounds interesting.
ReplyDeleteYou're welcome, Sally! I agree it's hard when you start an audiobook and then don't have time to listen for a couple of days. It's nearly impossible to flip back to skim for a "refresher" before continuing on with the story. Good luck!
DeleteCongratulations to you! I love mysteries with recipes as I love to bake and cook too. My email is pjaegly@aol.com.
ReplyDeleteThank you! And I hope you enjoy the recipe and others found in my books :)

ReplyDeleteThank you, Pat! I sure wish I could share some cookies with everyone :) Good luck!
DeleteI do listen to audio books. I have been listening to Cleo Coyle's Coffeehouse series on audio when I walk my miles most days. I listened to all of EJ Copperman's Haunted Guesthouse series on my walks. The problem with listening to Cleo's books when I am walking is they really make me want a cup of coffee! Sometimes I do have another one when I get home! Thanks for the recipe, welcome to the group and thanks so much for the chance to win a paper copy of your book!
ReplyDeleteElaineE246 at msn dot com
Thanks for stopping by, Elaine! I love Cleo Coyle's narrator too... she definitely brings the characters to life, and that extra cup of coffee sounds very tempting :) Good luck in the contest!

ReplyDeleteThank you! I wish I could have shared the cookies with everyone :) Good luck in the contest!
DeleteI have tried audiobooks but my attention span doesn’t make it work! I have a friend who loves them and can even listen while doing a puzzle! But for me, nothing beats holding a book in my hands. Best of luck, great recipe and thanks for the chance.
ReplyDeleteThanks for stopping by! It definitely can take some practice to get used to keeping your attention on an audiobook. But there is something very special about having a book in hand and turning pages that an audiobook just can't provide. Good luck!
DeleteI just can't do audio books. I like print and ebooks. Thank you for sharing your recipe and for the chance.
ReplyDeleteYou're very welcome, Brenda, and good luck in the contest!

I also listen on my MP3 player when I'm working jigsaw puzzles. I'd prefer a print copy of Essentials of Murder. tessa(dot)bookconcierge(at)gmail.com
ReplyDeleteI have to be honest. I seldom listen to audiobooks as I love the feel of holding a book. I love being able to reread passages as I imagine myself as the main character. yuvonnahemperley@gmail.com
ReplyDeleteHi Kim, congratulations on your new role. The cookies look lovely! I’m not a reader/listener of audiobooks but a friend of mine was a huge listener. She unexpectedly passed away and in her honor I purchased a few from a library sale. Looking forward to trying them. Dianakudsk@yahoo.com

ReplyDeleteI dont listen to audiobooks I did when boys were smaller at night it was easier then reading a book. Cookies sound amazing. Thanks for chance to win. Tammie Gunter
ReplyDeleteI don’t listen to audiobooks. I like to read the book
ReplyDeleteThe cookies sound good but I misdoubt I'll go to the trouble of buying lavender, extract or otherwise (do you know if either's available in an organic version?). The book sounds fun. We use audiobooks on long car trips but they have to pass my husband's test (loud, bellicose, not a romance). I sometimes use audiobooks when doing mindless chores (not using the sewing machine).
ReplyDeleteYes, I love to listen to audiobooks while I work, while I’m driving, crocheting, and working outside. Keeps me mind busy.
ReplyDeleteI don't listen to audio books because I am concerned about disturbing others in my household (OK, just my husband who hangs out wherever I am!), but it is a good idea since I spend most of my day sewing.
ReplyDelete
