Welcome to our guest, Terrie Farley Moran, who's joining us in anticipation of her new book arriving July 5th, Read to Death! It's the third in the Read 'Em and Eat Mysteries set in sunny and warm Fort Myers, Florida. Here's a taste of what's being served these days at the Read 'Em and Eat Cafe and Bookstore.
On Fort Myers Beach Sassy Cabot and Bridgy
Mayfield operate the Read ’Em and Eat CafĂ© and Bookstore, where you can always
find delicious food, thought-provoking book club meetings and the occasional murder
mystery waiting to be solved.
Chef Miguel Guerra is always trying new items and
especially likes to experiment with healthy food. Sassy likes to give Miguel’s
special dishes bookish names, so I am betting she would call this recipe Joyce
Carol Oates Bran Muffins.
Joyce Carol Oates Bran Muffins
1 Cup oat bran
2 Tablespoons oatmeal
1 ½ teaspoons baking powder
1 ½ teaspoons ground cinnamon
2 Tablespoons chopped almonds
½ Cup milk
1 egg
2 Tbsp honey
1 Apple cored and chopped
Mix oat bran, oatmeal,
baking powder, and cinnamon in a bowl. Stir in almonds.
In a separate bowl,
beat egg, add milk, honey and chopped apple.
Spoon mixture
into lined muffin cups. Put a tablespoon of water in the four empty muffin cups
to prevent burning.
Bake for 15 minutes. Test with toothpick. If not done bake
another 3-5 minutes.
Enjoy with your favorite cup of tea!
