As far as...Krista - great idea to add kidney beans. As far as the zucchini, I think the flavor is one we're not used to. We like it - in small doses - but strongly prefer broccoli and cauliflower in our veggie meals. It may be a consistency thing, too. Zucchini's good, but it does tend to get a little smooshy.
