Sweet Potato Balls

If your kids are like
mine, this is not a selling point. Neither is the

65% daily vitamin C count. In fact, this information

is greeted with as much enthusiasm as cleaning
their room, doing their homework, or shutting off

the television, but I digress.

Here's how I get my dudes to partake in my love
of sweet potatoes. Simply, boil these taters, mash them up and pack them
around a large marshmallow. Now they're reconsidering. Okay, so it's a little more
complicated than that, but you get the idea. Sweet Potato Balls are a wonderful way
to use this vitamin rich vegetable. Not only do my boys eat them, but they demand
seconds. Sadly, I can't do much about the other issues like cleaning and homework.
You're on you're own there.

Sweet Potato Balls

3 cups sweet potatoes, cooked and mashed

¼ cup butter

¾ cup brown sugar

2 tbspns milk

¼ tspn salt

1 tspn lemon zest

2 cups shredded coconut (or corn flakes

if you're not a coconut person)

Mix all of your ingredients (except coconut

or corn flakes), shape into a ball around a

large marshmallow, roll in coconut (or corn

flakes). Bake at 350 for 20 min.

Be sure to watch the oven for the last few

minutes of baking. The heat causes the

marshmallows to expand and they might explode.

The dudes love the element of danger in that

as well!
