Shrimp and Broccoli with Peanut Noodles @LucyBurdette




LUCY BURDETTE: Last Saturday was going to be a very busy day--including Tonka's participation in the charity Dog Wash to benefit the SPCA. He didn't enjoy the experience nearly as much as I did:)--though the dog washers couldn't have been more solicitous. 

The day would be capped off by the Final Four basketball game, featuring our beloved UConn Huskies. We were having a friend over for dinner, too, so I needed to make something nice but quick enough to finish off during halftime so I wouldn't miss a minute of the game.

I am crazy for sesame and peanut noodles, and always in search of the best recipe. My sister-in-law is famous for her noodles, which I will bring to you another day. I also love this recipe, which was adapted from one I found in Bon Appetit. Then I spotted another version in The Baker Upstairs, and I thought I could tweak it to suit my purpose, including shrimp and broccoli--fast and delicious!


8 ounces good quality pasta
1/2 cup chicken broth
3 tablespoons natural peanut butter
1/2 - 1 teaspoons sriracha sauce
1 1/2 tablespoons honey
3 tablespoons soy sauce
2-inch piece of fresh ginger
2 cloves garlic
6 green onions, chopped
chopped peanuts for garnish
fresh lime juice to taste

5-6 large shrimp per person, cleaned and marinated for an hour in 1 tsp sesame oil and a teaspoon hot sauce (or to taste)


1 large stalk broccoli, trimmed and cut into small branches

To make the sauce, saute the ginger, garlic and green onions in a little olive oil for 1-2 minutes. Add the broth, peanut butter, hot sauce, honey, and soy sauce and stir over low heat until combined. Squeeze in 1/2 lime and taste to see if it's spicy enough for you. That can be done ahead of time.


Fifteen minutes before you plan to serve dinner, drop the pasta into boiling water. Three minutes from the end, add the broccoli to the pasta water. When broccoli and pasta are tender, drain them and place in a large bowl. Add the sauce and stir to coat.

Meanwhile, in a frying pan, saute the shrimp for 3-5 minutes until pink. Serve the shrimp next to the broccoli and pasta, and turn your attention to the big game! (The pasta should be garnished with chopped peanuts, and maybe next time I'd add some chopped cilantro too.)
