Broccoli Salad

One of the fun things about summertime is the fact that we get a chance to catch up with out of town family that we really weren’t able to visit much of the rest of the year.

The children always have fun seeing out of town grandparents and aunts and uncles. And the adults have a lot of fun talking, laughing…and eating!

My mother-in-law in Alabama usually makes a wonderful broccoli salad for us to enjoy while we’re visiting. The nice thing about the salad is that it won’t get all wilted the way lettuce and spinach salads can, so she can make it in advance. It’s easy to transport, too--because sometimes we’ll visit other family in towns nearby and she’ll take along a big container of it. And…it’s easy. And has bacon in it! You know my philosophy….bacon makes everything better. :)

2 bunches broccoli
1 cauliflower
1/2 cup chopped purple onion
1/2 cup raisins
1/2 cup chopped pecans
12 slices bacon
1 can water chestnuts

Sauce:
1 cup mayonnaise
1/4 cup sugar
2 tablespoons cider vinegar

Fix the sauce ahead of time to chill it. Then pour over the vegetables a couple of hours before serving and chill.

I’ve even had this salad in place of a lunch before—because, when it’s this hot, a salad is plenty of lunch! Yet another side or meal you can make without your oven. ;)
