Down-home in a Hurry—Cheesy Broccoli Cornbread


Sometimes life feels like it’s hit the fast-forward button, doesn’t it?

Today is my children’s last day of school before summer vacation. And I’ve been scrambling around like a chicken with my head cut off. :)

Last week I was in a hurry, too! So I ended up making Apricot Chicken, which is also quick and easy. This cheesy broccoli cornbread is just the ticket for an easy side dish for that, or any meal.

I’m thinking that as soon as these children are out of school that I’m going to have some lazy summer days with them. We’ll go out and eat honeysuckle right off the vine, wade barefoot in the creek, and pick tomatoes right from the backyard. Or…am I just dreaming? :)

Cheesy Broccoli Cornbread


1 box commercial cornbread mix (or 1 1/4 C. cornmeal mix)
10 oz. frozen, chopped broccoli (thawed…which I did courtesy of the microwave)
2 cups grated cheese (you could use cottage cheese, but I love cheddar)
1 chopped medium onion
1 stick melted margarine

4 beaten eggs

Preheat your oven to 400 degrees. Mix all the ingredients and pour into a greased Pyrex dish. Bake for 30 minutes (my oven runs hot, so it was a little less) or until toothpick inserted in center comes out clean.

Yes, that’s it! Just mix, pour, and bake. And it really does taste delicious, y’all.
