Warning: For Chocoholics Only!



Chocolate is one of our favorite gifts for Valentine's Day. With that in mind, I thought I would bake brownies. But I wound up making these brownies as a cupcakes. Make no mistake, though, these are like rich, decadent brownies, just in a cupcake paper.

There are several fun options with these. You can bake them without the chocolate chips or the chocolate kiss.

If you like chocolate but have uttered the words, "it's too chocolatey" then omit the chocolate chips.

If you believe there's no such thing as too much chocolate, then include the chocolate chips or the chocolate kisses.

We're all running around so busy that I tried to keep the toppings easy. The easiest by far is to dust them with powdered sugar and top with a halved strawberry. Note though, that it's best done immediately before serving. Neither the powdered sugar or the strawberry will look nice the next day.

Or you can top it with Nutella. It's easy as can be and looks so pretty. Top the Nutella with a berry or a chocolate kiss.

Chocoholic Brownie Cupcakes
Makes 12.

6 tablespoons unsweetened cocoa powder
4 tablespoons unsalted butter, melted
1 cup sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup plus 2 tablespoons flour
1 tablespoon warm water
1/2 cup chocolate chips (optional)
12 Hershey's kisses (optional)

Preheat the oven to 350. Place cupcake liners in a cupcake baking tray.

In an electric mixer, combine the cocoa powder with the melted butter. Stir in the sugar. It will look grainy at this point. Add the eggs and beat. Add the vanilla and beat. Sprinkle the salt and baking powder over the mixture and beat. Add the flour and beat, scraping the sides as necessary. Add the water and beat. It should now appear smooth and glossy. If using the chocolate chips, add them now and stir well to distribute.

Divide the batter among the 12 cupcake liners. If using the chocolate kisses, push one into each well.

Bake 16-18 minutes until the tops are set and they appear done.

Toppings:

1) powdered sugar
strawberries

2) Nutella
raspberries
Hershey's chocolate kisses

1) Sprinkle powdered sugar over cupcakes with a sieve. Halve strawberries and place one on each.

2) Spread about 1/2 teaspoon of Nutella on top of the cupcake brownie. It will look clumpy at first, but keep smoothing it in a circle with the back of a spoon and it will become glossy and smooth. Top with a raspberry or a Hershey's kiss.
