Banana Blueberry Muffins #mystery #CapeBreton #recipe #giveaway

On our holiday in beautiful Cape Breton this October, we were lucky enough to enjoy breakfast at a fabulous B & B, Colby House in Sydney, shown here ready for the holidays.   We are looking forward to seeing them again next year!

   
One morning banana blueberry muffins were part of the delicious menu.  They were outstanding. We asked the B & B owner, Bev Gabriel, for the recipe and she disappeared and reappeared two minutes later with it hand-written on a recipe card. The recipe turned out to be easy as well as yummy.  I’m sharing it with you because it brings back memories of a wonderful stay, a great trip and because I suspect that you want something easy and delish to have ready at a moment’s notice during the busy lead up to the holidays.  Or maybe you just want a treat with bananas and blueberries.  Enjoy!


I was particularly happy when a child who claimed not to like bananas or blueberries decided that these muffins were delicious! Knew it. 


Banana blueberry muffins

 

 You will need: 

1 extra large egg, room temperature
¾ cup white sugar
¼ cup butter, softened
3 ripe bananas
2 cups flour
2 tsp baking powder
1 ½ tsp baking soda
½ tsp salt
1 ½ cups frozen wild blueberries (the small ones or they will turn everything blue)


Directions:
Mash bananas in a large bowl.


Add sugar and egg. 



Add butter and combine well. 

Combine dry ingredients and gently stir into mixture.   Don’t overbeat. 

Add blueberries quickly and with the minimum of stirring, so they don’t turn everything blue.  




 Although we had been warned, we couldn’t find the small small frozen blueberries and had a few extra blue streaks but the taste was great. 

Transfer to 12 well-greased muffin cups.



Bake at 375 convection for about 20 minutes (or until done).


Mmm. Delicious!  



You can enjoy them warm from the oven or freeze to enjoy later.  They freeze really well!  


Just put them in freezer bag and you're set.  So if you need a break during this hectic season, pop one in the microwave for a few seconds, just long enough to warm it.  Add a little sweet butter and enjoy with a cup of hot tea.

  5. MJ/Victoria. I make banana muffins and blueberry muffins but never thought to combine the two in one recipe. I will have to try this.

    And lucky you vacationing in Cape Breton. I have visited there twice and it is beautiful like your photos show.

    I like staying at B&Bs when travelling. The homey setting and friendly owners make the stay much nicer than a generic hotel.
    Last one I stayed at was in Belleville (ON) for 2 nights. The gourmet breakfasts were delish!

  7. We visited Cape Breton back in the 90s when we still lived in Ohio. Beautiful. I don't think there is any way you can mess up a blueberry muffin! Cranberry orange is good too.

  8. We stay in a B&B in Lititz PA about once a year. We’ve never had muffins there but she makes some kind of banana bread or bar for dessert every morning.

  10. Several years ago, we stayed at a B&B in a small town near Lubbock, Texas. I chose the B&B because each room was dedicated to a hero of the old Western movies, i.e., Gene Autry, Tex Ritter, etc. We chose the Roy Rogers room since he is my childhood hero. It was an experience! The owners were very nice and the B&B was a house built in the 1920's. The bed must've been put together earlier than that & the bath was down the hall! Breakfast began well with a good neutral muffin & fruit & should've stopped there. The "main course" was sausage gravy, something I could live without forever! The room was really great though. It was filled with Roy Rogers & Dale Evans items. I'll ask about the beds, the baths and the breakfasts in detail before our next B&B stay!   12. We have stayed in many B&B's in Canada and Britain. One of my favourites was the former residence of Senator Elsie Inman in Lower Montague, PEI in the 1990's. Next time we are in Cape Breton, we'll have to try Colby House. I look forward to having the muffins in the freezer for company at Christmas. I also love reading Camilla's adventures (each book more than once) and if the lucky winner, I will add that book to our special library of (Canadian) mysteries in Eleuthera.

  24. Looks delish! I make muffins grain free using coconut flour and eggs. They’re sweetened with honey. I love adding blueberries. My batter is relatively thin, so I drop the fresh blueberries (in season) on top. They settle as they bake. Also in demand are the muffins with chocolate chips.   25. Blueberry muffins are at the top of my favourites list, followed closely by banana muffins. Actually, now that I think about it, any kind of muffin made with fruit is fine with me.
