Apple Bundt Cake and a Giveaway!



On Tuesday, I flew through a store in a big rush because Twinkie was in the car waiting. We really needed milk. As I ran through (why are stores so big?), a display caught my eye and I came home with two packages of seasonal cookies. The last cookie was consumed on Thursday night! Two days! How desperate are we for something sweet? And to be honest, while they were edible, they weren't all that great.

The biggest thing I could think of to bake was a Bundt cake. I'm in my apple mode (hi, Sheila!) these days, throwing them in everything. If the oven is on for some other reason (roasting chicken for instance), I pop a pan with a couple of apples into the oven, too. So delicious! Even without nuts or anything else.

I also happened to have apple cider on hand, so I incorporated it into the recipe. Cinnamon, apple cider, brown sugar, and fresh apples—yum! I topped it with a powdered sugar drizzle as in the photo, but honestly, we decided we'd rather eat it plain with a dollop of whipped cream.

Apple Bundt Cake

butter for greasing pan

2 3/4 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 teaspoon cinnamon

pinch of nutmeg

4 large eggs (room temperature)

3/4 cup granulated sugar (plus extra for pan)

1 cup dark brown sugar

1/4 cup vegetable oil

1 cup apple cider

1 teaspoon vanilla

1 1/2 cups diced apples (about 1 1/2 large apples)

Preheat oven to 350. Grease the pan with butter. Sprinkle granulated sugar on the butter, shake and rotate as you would to flour a pan.

In a large bowl, mix together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.

Place eggs,  3/4 cup sugar and brown sugar in mixer and beat. Add the oil. When well blended, add the flour mixture a bit at a time, alternating with the apple cider. Add vanilla. Beat well to combine. Add the diced apples and stir to mix. Pour into prepared Bundt pan.

Bake 45-50 minutes.

When cool, top with a sugar glaze or powdered sugar. Or leave plain and serve with a dollop of whipped cream!

Stir in apple chunks and pour into sugared pan.

After baking.

Mmm. Even good plain!

  3. Apples and spice are a favorite in our house. I prefer Bundt cakes as they are always moist. Thank you for the recipe and mostly for releasing another of your fabulous books. Super cover for a great book.

  6. Yum! You can't go wrong with apples (which is why I've been stashing bags and containers of pre-sliced and pre-chopped apples in my freezer, in case I feel a craving (I'll let you all know how the freezing experiment turns out).

  18. I love to throw apples in everything too! Not only sweet stuff, but savory stuff also. My favorite is a chicken salad recipe with apples. Delicious.

  23. I hate my tablet. This will be my third try at leaving a comment. The recipe looks tasty and the ingredients cheap enough that I'd be willing to give it a try. My from scratch recipes, even from big name cookbooks, are a bomb and sometimes an expensive failure.

  25. I made a very similar recipe labeled a "Jewish Apple Cake." I didn't have enough cider to use so went with the recipe that called for orange juice. I only had enough ingredients to make a half recipe (loaf pan). It was sooo good I could have eaten it all right away. I really want to read "Not a Creature Was Purring." I love Wagtail and wish I could move there! I also have a fondness for mischievous terriers.

  27. We are probably the only house around the doesn't normally have apples on hand. When I do buy them, I buy one or two at a time so they don't go bad. They don't sit well with my stomach if I eat them often (but I can eat apple pie!).

  34. Oh my goodness! The recipe for the Apple Bundt Cake sounds to die for (pun intended) and one that everyone in my family would love. I will be trying this recipe.
