#Tailgate Time! Reuben Sliders #Recipe @PegCochran

It's tailgate time!  The weather is turning crisp, the leaves are turning colors and thoughts are turning to FOOTBALL!  This recipe is perfect for a tailgate party--easy to put together and delicious.  I took them to a party and they were gone in seconds (which is why there isn't a pretty picture of a slider sitting on a plate--I wasn't quick enough!)

This comes from several recipes I found on the web.  I varied the quantities of the ingredients a bit, but you can really play this one by ear.


Ingredients
1 pkg. Hawaiian Sweet rolls, sliced open
1/2 cup Thousand Island dressing (more or less--I probably used more)
1 lb of corned beef, sliced thin (I had enough left over for a sandwich)
1 lb sauerkraut, drained (16 oz jar or as close to that as you can get)
6 slices Swiss cheese
2 tbsp butter, melted 


Instructions
Preheat oven to 350 degrees.
Drain sauerkraut thoroughly. I let it drain in a strainer and then squeezed further moisture out with my hands. 


I found this fabulous craft beer sauerkraut!


Drain very very well


Butter bottom of 13x9 baking dish or spray with nonstick spray
Slice the rolls in half.  The rolls wanted to tear because they were very soft.  Next time I would refrigerate them or even freeze them slightly to make this easier.  Lay rolls in the baking pan.
Spread approximately 1/4 cup Thousand Island dressing over the rolls (I used more.)
Lay corned beef over the rolls--no need to worry about each individual roll.
Spread sauerkraut over the corned beef.
Lay the Swiss cheese on top of the sauerkraut (six slices covered the rolls for me)
Spread remaining Thousand Island dressing on the inside of the top halves of the buns and place over the Swiss cheese.
Spread melted butter over the tops and bake for 15 to 20 minutes until cheese is melted and tops are golden.
Eat, enjoy and root for your team!

    1. What a good idea! I haven't had a reuben in eons. I asked my husband to buy a roast or beef brisket a couple weeks ago, depending on price. He came home with a corned beef brisket. He obviously didn't read the whole label. Oh well.

      1. I once sent my husband out for smoked salmon for brunch and he brought home a piece of raw salmon! Sometimes you just have to go to the store yourself!

    2. Poor confused husbands. And all they wanted to do was help!
      This is a clever way to make a bunch of sliders very efficiently.
      Using the basic idea, we can vary the fillings to taste.

      1. Yes, it's terribly sweet that they want to help! I also made Philly cheese steak sliders like this and they were also a big hit. You could even do ham and cheese for something simpler.
