Gluten-free Lemon Bundt cake #recipe from @DarylWoodGerber + book #giveaway

I've had a very busy and exciting week. GIRL ON THE RUN came out on Saturday, and it has received some terrific reviews.

Then I had a virtual release party on Sunday night. What a bunch of fun. Lots of readers came to the party and asked me a ton of questions. My fingers were tired by the end of the hour!  I love communicating with readers. I learn so much. I get so much inspiration from their united energy.

I find the virtual parties are like book clubs. We chat, we laugh. We share what we like about a book or genre. 

The one thing we can't do - unless we do it virtually - is share treats. Oh, sure, I have virtual cocktails and sometimes virtual cookies or appetizers. 

But a real honest to goodness treat is hard to come by virtually!  LOL

However, if I were to go to a book club, the next treat I would bring is this cake (below). Peg shared a lemon cake recipe recently, and it looked so delicious that I had to make it gluten-free.  This works like a dream and is so easy. Even Jenna, in my Cookbook Nook Mysteries, could make it without messing up. 5 ingredients!  Now, Peg poked holes into her cake and drizzled sweet goodness into it. I wanted to make this a little less sweet, and guess what, it turned out terrific.

Plus, for some reason, the recipe made enough for 2 small loaf pans more. Not sure why?? But plenty for any book club. Or just a family. Or yourself.

Gluten-free Lemon Bundt Cake inspired by Peg Cochran

4 eggs
1 package gluten-free white or yellow cake mix (I used Betty Crocker)
¾ cup oil
1 package instant lemon pudding mix (make sure it's gluten-free)
¾ cup water

Preheat oven to 350 degrees.

Pour eggs, cake mix, oil, lemon pudding mix, and water in a large bowl. Mix well. 

Pour into a greased Bundt pan.




Bake at 350 degrees for approximately 45-50 minutes for the tube pan and 30 minutes for the other.

Let cake sit for 10 minutes in the pan.  Then run a knife around the edges and invert.  I dusted Bundt cake with powdered sugar.

  2. The last book club meeting I attended was in March. We are a small group of Mystery Lovers called Murder by the Book. One of our members talked about the books by Louise Penny. Others spoke about books they had recently read and enjoyed.

  5. I have never belonged to a book club however when we had a local book store I used to go in once a week to talk to all the older ladies about what they had been reading. They helped guide me down the path towards cozy mysteries but introducing me to the genre and one of my favorite authors. utaker555@gmail.com

  7. Liz, Diane, and Jen, thanks so much for dropping in! Diane, your book club sounds fun! I tried organizing a mystery book club when I lived in Charlotte, NC. We read one mystery and then everyone wanted to read something literary. (Everyone but me). It folded! LOL

    Holden, isn't that funny? I think people want to read and "finish" things, but then life gets in the way, but they still want to "party." :)

    Brittany, that is so cool. A local book store can be so informative! I am missing OURS, too! I hate that brick and mortar is so hard for this "brave new world" to support.

    Sandy, that's too funny! I agree. It feels like "school" if it's assigned. But it is fun to read the same book as friends and then be able to chat about it.

    Daryl, my first and last book club meeting was ten plus years ago. Ladies who lived along a lake took turns hosting the meeting and dinner. My neighbor invited me when it was her turn to host. I read the book and came prepared to discuss. Every time I said something I was shot down by one of two ladies who took over. It was maddening and funny at the same time. At any rate I did not join the club. My sister started a book club briefly. It fell apart when two of the members refused to read anything that might possibly be sad.

    The cake looks great (both yours and Peg's!). If it has lemon it has to be delicious, and gluten-free means my granddaughter can enjoy it with us.

    I haven't been to book club in a while. Last time the book was a little too serious (not a mystery, cozy or otherwise) and most of the members hadn't read the book. I'm serious about my book club - I want to discuss that book ;-).

  19. I have never belonged to a book club unless you count my mom and I discussing books back and forth. I (sadly) don't know anyone else that likes to read. I know, how can that be? But, it's true. Mom's gone now so I don't have the opportunity anymore.

    Libby, yes, gluten comes in all sorts of ways. I had to change my shampoos (of all things Suave is great!). I've changed my skin lotions. And once I became gluten-free, all the canker sores I'd had in my mouth (up to 10 a month) went away!!!! Yay. Amazing.

  27. My last book club was when my daughter was in kindergarten, and a bunch of moms got together once a month. We had a proper book club discussion at the first meeting, then everyone after that was just talking about our kids, school, etc... It was nice having grownups to talk to. I even remember our first book -- The Red Tent by Anita Diamond, probably because we actually discussed it. Our last book was Cheaper by the Dozen!

  33. I have never attended a book club but I do know a few people that belong. I am one who likes to read books of my own choosing. I have checked into Oprah's book list and others and sometimes see what is new. I love your cozy mystery books and excited for "Grilling the subject". I always buy my books from Barnes and noble and was disappointed last Saturday that "Girl on the run" was not on the shelves.     Celia, that's so funny. Cheaper by the Dozen! I think that's one of the points of book club. It gets people to read the same book, not necessarily meet to discuss it at length.

    Sue, you have an arch enemy? Do tell!! I've never had an arch enemy except when I was 10. I do remember the initials SB. :)

    Patty, that was the trouble for my short-lived book club. We couldn't agree on the book and then people showed up without having read the book we'd all agreed to.

    Nicole, I think the ones run by libraries are so good because there's no commitment to "friends" to show up. You can pick and choose.

    Julie, wishing your mom good health. It is hard to find, but there are so many more cookbooks now that really do help with the whole commitment to eating gluten-free.

    Crossxjo - I'm sorry B&N doesn't have it on its shelves either, but this is only in paperback through Amazon. It's self-published and hard to get regular bookstores to carry it. But amazon delivers it within a couple of days!

  38. Well the recipe looks wonderful. I have never been in a bookclub. I do discuss books with friends online and over the phone though. And today I even taught my neurologist what cozy mysteries were, lol. Also discussed the books I love which includes Girl on the Run. I would love to win a paper copy.

But must tell you i read alot of cozies and would just love to get my grubby hands on this book to read and especially review asap! I would have to have it in print lately alot of people want me to read their books due to the Goodreads 1% reviewer along with others who are paid and i am not but the problem is that they have to be in print. pronto, would love to read!
