Delicious gluten-free cupcakes for #Easter from author @DarylWoodGerber

I love Easter. Not just for the religious reasons (which are special and private to me) but because this time of the year signals new-ness.  New growth, new beginnings, and birth (flowers, leaves, baby birds).

An Easter egg hunt, children's laughter and eagerness, running "free" and hunting for something special. These are the things that make me relish this time of year.

However, because no little ones live in my home, I don't get to dye the eggs. I mean, c'mon, why make a mess unless you're not going to share that mess with someone? So this year I decided to go for "color". I made special "colored" cupcakes instead. I can enjoy those any time of the week...season...year. All by myself.

Now, because I'm also on a tight schedule--writing something new, editing something future, and doing lots of PR for my upcoming release GIRL ON THE RUN--I didn't have time to do something overly difficult.

So let me share a great company with you. For those who need to eat gluten-free, I really like Stonewall Kitchen products. I learned about the product from my agent! I have never had a bad reaction to their products. Each one has turned out exactly as advertised. Fluffy, flaky, delicious!

For this recipe, I used the vanilla cupcake mix. Then I scrounged through my cupboards and found all the colorful sprinkles I could find. Perfect. Easy.

DIRECTIONS:

You will need a box of gluten-free vanilla cupcake mix.

Follow the directions for the batter on the box. You will need eggs and butter and liquid.

Set 12 cupcake liners in a tin.

Fill the liners 2/3 full.

Bake the cupcakes according to package directions.  Remove from oven and let cool COMPLETELY on a wire rack.  That takes about an hour.

Make the frosting. Use a spatula to frost the cupcakes. I dusted with green sugar first for sparkle, then added colorful sprinkles!






Better than a dyed hard-boiled egg.  LOL

These come out flaky and light every time.

(If you don't eat them all in one sitting, remember to keep tightly covered so they remain moist.

  7. You don't have to dye eggs? I can't imagine Easter without hard boiled eggs. We eat them without the dye year 'round. I'll cyber send you some. ; )
