I like to add dried cherries or cranberries to the salad along with mandarin oranges or clementine sections, both of which pair nicely with this dressing. If you don't have a nut allergy, a handful of chopped pecans would also taste good.
1/2 cup extra virgin olive oil
1/4 cup rice wine vinegar
2 TBLS orange marmalade
2 TBLS balsamic vinegar
1/4 tsp salt or to taste
pepper to taste
Shake in a closed jar or whisk in a bowl until blended. Any leftover dressing can be saved for another day.

Measure your ingredients and put in a bowl or jar
Bon Appetit!

that's a really nice looking winter salad Peg--thanks!
ReplyDeleteOh yum, Peg! This sounds lovely and your salads are beautiful.
ReplyDeleteHugs.

I love orange marmalade, so I am definitely going to try this one.
ReplyDeleteThat looks so good! Thanks! I pinned it.
ReplyDeleteBeautiful salad -- and I so agree that it's nice to mix up (pun intended) the variety a bit. This dressing could be made with a variety of jams and marmalades -- continuing our "Clean Sweep" theme!
ReplyDeleteA lovely change of pace.
ReplyDeleteAnd for those who'd like to add onion to their salad but feel it's too assertive, give it a quick blanching in hot water. That taste the edge off.
Orange with balsamic! Interesting combination. I bet it's good!
ReplyDeleteMaking this tomorrow. I have all the ingredients except rice wine vinegar, will sub another kind of mild one. Yummy!
