Scottish Brown Sugar Shortbread Cookies @LucyBurdette #recipe

LUCY BURDETTE: In October, my husband went on a dream trip —playing golf in Scotland with his three brothers and four other childhood friends. (Aren't they so cute?) They had an amazing time, and he came home with small packages of Walker’s shortbread cookies, which they found at every hotel and B and B.  
Naturally I became addicted to these cookies and decided I should try making some myself. Neither the brown sugar nor the almond extract are traditional, but they sounded like good additions to me.

Ingredients
    •    1 cup unsalted butter, softened
    •    1/2 cup packed brown sugar
    •    2 to 2-1/2 cups all-purpose flour
    •    almond extract, 1 tsp

Cream the butter and sugar until light and fluffy. Mix in the extract. Mix in the flour on low speed until it’s just combined. (If you work the dough too hard, the cookies will be tough.) 

Roll the dough out on a piece of floured parchment into a rough rectangle (no more than 1/2 inch deep), then move the whole thing to your baking pan. Score the dough into the size cookies you want. Bake at 325 until lightly browned. 







Once removed from the oven, prick the warm cookies with a fork and cut through the scored lines.



You might want to whip up a batch for National Shortbread Day on January 6!

  3. Hi Roberta! I'm addicted to the Walker's shortbread as well. My night time snack is 2 with a cup of tea, and I try to find all the fun tins as well (currently I'm devouring a gigantic Christmas tin from the local warehouse club). I really like that they're so simple and tasty, with only 4 ingredients. I'm going to try your recipe and make them myself - thanks for posting!

    2. Yes, the gigantic tin is from BJ's and it's $19.99. I also order the fun shapes and tins (less economical, but oh so cute!!!) directly from the Walker's website. They always have free shipping on $39 orders. :-)

  4. Oh yum. (Actually, I want the sheep ones.) Shortbread cookies have just the right amount of sweetness. Love the addition of the almond extract.

  5. I think Nicole's referring to the 4 lb. tin that Costco sells for a great price was $19.99. I still have a third of it from last year that I have to throw out, so I should try your recipe since it seems easy enough for me and I won't have the waste.

  7. You're welcome Jen! Jody, the texture on mine was slightly sandy, if that helps:). I was supposed to go for a couple of days before the golf started for the guys, but I wasn't feeling well. Hopefully another time!

  12. Oh sorry Celia, it was a very special trip. They took my father-in-law (now gone) to Ireland when he turned 75--something none of them will ever forget!
