Guest Laura Bradford Brings Blondies and Books! #recipe #giveaway

LAURA BRADFORD: Over the last decade or so, I’ve developed quite a love affair with white chocolate. But it took my daughter pairing it with peppermint in a to-die-for hot chocolate over the holidays to send me into the kitchen with a mission of my own: to create a white chocolate peppermint blondie. 

If the reception I received from my husband and kids is any indication, I think I pulled it off.  Now, if I can get Aunt Diane (from my Amish Mysteries) to serve it to her guests at Sleep Heavenly, I’ll know I truly got it right…

White Chocolate Peppermint Blondie

Preheat oven to 345 degrees. Grease a 9 x 9 pan.

Ingredients:

* 8 ounces white chocolate
* 1 Tablespoon vanilla extract
* 1/8 teaspoon peppermint extract
* 1/2 Cup butter
* 1 ¼ Cups all-purpose flour
* 2 eggs
* 3/4 teaspoon salt
* 1/3 cup white sugar
* 1/2 Cup white chocolate chips
* 1/2 Cup semi-sweet chocolate chips

Topping (optional):

* 1/2 Cup white chocolate chips
* Crushed candy cane


Directions:

1.    Melt the 8 ounces of chocolate with the butter in a double boiler. Stir constantly until smooth. Allow to cool.

2.    In a large bowl, beat eggs well. Add vanilla, peppermint, and sugar. Mix.

3.    Add melted white chocolate to mixture. Mix.

4.    Combine the flour and salt and then add to the white chocolate mixture.

5.    Fold in chips.

6.    Spread the batter into the prepared pan.

7.    Bake for 20-25 minutes.

8.    Sprinkle the remaining white chocolate chips and crushed candy cane across the top of the blondie and let cool on a wire rack.

Laura is a former Agatha Award nominee, and the recipient of an RT Reviewer’s Choice Award in romance.  SUSPENDERED SENTENCE (the 4th Amish Mystery) is now available. WEDDING DURESS (the 10th Southern Sewing Circle Mystery) will release April 7th.

  56. Last year our family spent a remarkable and beautiful trip from MA to Lancaster County to celebrate our 50th wedding anniversary. Our daughter and I loved going to all the quilt shops and we felt it was a unique location to show our grandchildren an area very different from their hometown. The children were fascinated with the horse and buggy carriages among other things. I read as many Amish books as I can and hope to read yours very soon. White chocolate is lovely to use in desserts and as a fruit dip. Thank you for the really great information and the contest.
