Chicken Pomegranate Quiche #recipe + book #giveaway for AS GOUDA AS DEAD

But first a recipe!  I'm in cheese mode this month. I warned you. Last week, cream cheese frosting. This week, quiche! I adore quiche. It's so easy to make. Especially if you use a store-bought crust. I find the best ones at Whole Foods, but there are some other fabulous choices, too.

The tough thing about this recipe is getting the pomegranates out of their shell...or is it? I saw a great youtube video that helped me understand how to do this easily. I shared it about a year ago when I made a fall salad using pomegranate seeds. Well, here are the pictures again. *Below. You need a bowl, a wooden spoon, and a sense of fun and adventure! Ready go! Bang, bang, bang.

BTW, have you heard of a dammit doll? I was given one for New Year's. It's a doll you can slam against anything and get out your aggression. I haven't slammed her yet, probably because I have a pomegranate in the house! And I have no aggression. It's only January. There's plenty of the year left. LOL







Chicken pomegranate quiche

         
(Serves 4-6)

         1 cup chopped, cooked chicken breast (8 ounces)
         1 cup shredded Swiss or Gouda cheese (4 ounces)
         1/4 cup chopped onion  
         1 tablespoon cornstarch
         1/2 cup chopped pecans, optional
         1/2 cup pomegranate seeds
         1 (9 inch) unbaked deep-dish pastry shell (gluten-free, if necessary)
         
3 eggs, beaten
         1 1/4 cup 2% milk
         1/4 cup cream

Preheat oven to 325 degrees F.

Remove pomegranate seeds from shell (see below). Cook and dice chicken.

In a medium bowl, stir together chicken, cheese, onion, cornstarch, 1/4 cup of the pecans (if desired), and pomegranate seeds. Spoon into pastry shell.




I opted not to put pecans in this version!

In another bowl, beat eggs with milk and cream. Pour over the chicken mixture. Top with remaining pecans (if desired).


Bake in preheated oven for 50 minutes, or until done.




I did include pecans in this version!

  4. I'd have to say pizza or mozzarella sticks with marinara dipping sauce is one of my favorites, or a nice cheesy grilled cheese panini sandwich. Basically, I'll eat just about anything with cheese in it. Thx for the giveaway opportunity.

  6. i'm such a fan of pomegranates. Did you know that they sell the seeds ready to use? I've even bought them as a snack! I never thought about pairing them with cheese, but why not?

    The pomegranate seeds add a lovely color burst.

    Favorite cheese treat? I have homemade bread (various varieties) spread with peanut butter and covered in sharp cheddar. I survived college with those ghastly peanut butter cheese crackers from the vending machines! This is SO much tastier!!!

    1. Libby, they are pretty, aren't they? Funny thing. The quiche lasted a few days. I know, how could it, but it's just two of us in the house. Well, the pomegranate color vanished. It must have leeched into the quiche. Tasted the same but the "pretty" was gone. Magic.

    1. Sandy, I know. I'm sorry. I have a problem with wheat (celiac) and I miss out on a lot of treats, too. Hopefully you can enjoy the characters in my stories. And I often have recipes that don't contain any dairy! :) Hugs.

  18. Well, you can't go wrong with quiche. And then there is always nachos and chili cheese potatoes and mac & cheese and pizza - but when I really want cheese then I just want to find a complementary cracker and have little bites of the cheese.

  21. Love quiche. Don't think I've ever had a pomegranate.
    My favorites are macaroni and cheese with hamburger mined in. My son-in-lay calls it Chef's Surprise. I also make a dish with 3 or 4 kinds of melted cheese, sour cream, and chicken. this gets put over spaghetti. When you are finished you want to be sure you don't have a cholesterol test coming up soon. This was a recipe I concocted from something I saw on TB.
