Breakfast tortillas ready for the freezer |
4 tortillas (Fajita size)
4 eggs
½ green pepper diced
½ jalapeno diced
Approx. 1/3 cup diced red onion or regular onion
4 sausage patties microwaved according to directions (I used
turkey sausage)
Whisk eggs in a bowl.
Spray skillet with non-stick spray.
Add vegetables and sausage and cook, stirring for 2 minutes. Pour in eggs and scramble leaving very
slightly moist.
Lay tortilla on a piece of plastic wrap. Fill with ¼ of cooked mixture. Roll and then roll in plastic wrap.
Freeze for future use.
Heat approximately two minutes in the microwave (may take slightly longer—mine
sit out while I drive to work.)

Sounds good. I'll bet some of those frozen hash brown potatoes would be good in that too.
ReplyDeleteEver since my younger brother moved to Texas, he's loved making breakfast tortillas. I'll have to give him this recipe to see how it compares to his! For me, I'd probably use bacon in place of sausage. Looks delish!
ReplyDeleteHey, some great suggestions! These can be altered to suit your tastes. The great part is you can make a batch of them and then freeze them for a grab and go breakfast that's healthier than the drive-through.

ReplyDeleteMy husband does this each Sunday morning with the leftovers from Saturday night steak, baked potato and Sunday morning's scrambled eggs w/onion and red pepper...or a variation thereof. He loves his morning breakfast burrito when going to work.

ReplyDeleteI've run into only one double-yolked egg in my life. I was so surprised I said "Oh, hello" out loud to it, like it could hear me.
Marc and I make breakfast burritos every so often and love them, but we never thought to freeze them (and microwave) for fast meals and snacks or lunches on the go. Brilliant idea! Thank you, Peg!
