Baked Latkes?

And now to food!

I have to admit that I am a fan of baked french fries. (Don't tell, but I buy the frozen ones!) My dogs like them, too. Yet when I saw a recipe for baked sweet potato Latkes, I had my doubts. Okay, so maybe baking would work with sweet potatoes, after all, they're a slightly different texture and the recipe included yummy things like cinnamon and nutmeg. But what about Latkes with regular potatoes? It was a challenge that turned out surprisingly well.

I used Yukon Gold potatoes, and stuck with basics for the first attempt. Afraid that garlic might burn at 400 degrees, I used garlic powder instead. That's the only major thing I will try differently next time. Using minced garlic might bring a flavor that pops a little. You could definitely add your favorite herbs to change it up. While I usually hand grate potatoes, I was using 2 pounds, so I let the food processor do the hard work, which made the process very fast. Even the onion went into the food processor.

When they bake, some of the liquid seeps out and turns dark. Don't let that worry you. It comes off the baking sheet easily after a brief soak.

Now, I do have to say that they're not like fried Latkes. But if you are trying to get away from fried foods, or lighten up a little bit, these are really very tasty. In fact, I thought I would take more photos but before I looked around – they were gone! This recipe made a dozen Latkes, and I have enough left in the fridge for two more.


Baked Latkes


2 pounds Yukon Gold potatoes
1 medium onion
1 teaspoon pink sea salt (you could reduce this to 1/2 teaspoon)
1/4 cup flour
1/2 teaspoon baking soda
1 teaspoon garlic powder
2 eggs
1 tablespoon olive oil

Preheat oven to 400.

Peel and shred the potatoes and the onion and place in a large bowl. In a separate bowl mix the salt, flour, baking soda, and garlic powder. Lightly beat the eggs. Mix all ingredients together.

 

Spread the olive oil on a baking sheet. Use a 1/4 cup measuring cup to scoop out each Latke, and press flat with a spatula.

The back ones have been flattened.

Bake 35 minutes. Flip and bake 12-14 more minutes.

  3. Sounds tasty! Frying latkes has always been a hit or miss in our household (with a lot of misses); I think I'm going to have to try this out for Thanksgivukkah.

    1. I hope you like them! We thought they were very good but they are a little bit different from fried ones. I know what you mean about hit and miss. I think these are a little bit easier and probably come out right most of the time.

  4. LOL to "vt_loki" on "Thanksgivukkah" -- and while Hanukkah is all about the tradition of the oil, I have to admit that baked makes sense for health reasons (and ease).   10. Wow! Having figure out the computer workout here! I think Miss. Carlisue is snickering! She's most definitely interested in the food pictures-yum! And she would love to join the street team though, if she were there she would try to run things despite, or perhaps because of, her diminutive size? Definitely going to try the latke recipe! Thanks for that!

    My dog Harley would love a bandana. My husband, who is active Air Force, and I got Harley when we lived in Florida. The man who had him was being transferred and wanted him to go to a good home. We love our Harley who provides me with protection when my husband has been deployed.

  15. I love this idea of baking latkes. They can be such a mess to fry. I'm definitely doing them this Hanukah, uh, Thanksgiving, uh…very confusing this year. But may all who celebrate be blessed!
