Many Blessings Cookies

Welcome to the special Holiday Recipe week at Mystery Lovers' Kitchen. We're hoping to provide you with a whole list of mouth-watering dishes to make your holidays even more merry and bright. 

I wanted to start us off with a delicious and super easy cookie recipe. This is the perfect cookie to make with kids, grandkids, nieces, nephews—you name it—because it has not one, not two, but THREE kinds of chips in the buttery batter. My sous chef ate so much of the dough that she could only manage to stuff down a sample of the finished product. But the scents of baking cookies, melting chocolate, and warm butterscotch was heavenly. These cookies freeze beautifully and would be perfect to make now and put away for the holiday cooke exchange. Enjoy!



Many Blessings Cookies

•   1 cup butter, softened
•   1 cup packed brown sugar
•   1⁄2 cup granulated sugar
•   1 teaspoon baking soda
•   1 teaspoon apple pie spice
•   1⁄2 teaspoon salt
•   2 eggs, lightly beaten
•   1 teaspoon pure vanilla
•   1 1⁄2 cups all-purpose flour
•   3 cups rolled oats
•   1 cup white chocolate chips
•   1 cup bittersweet chocolate chips
•   1 cup butterscotch chips

Preheat oven to 375 degrees. In a large bowl, beat butter with electric mixer on medium speed for 30 seconds until smooth. Add brown sugar, granulated sugar, baking soda, apple pie spice, and salt. Beat until combined, then add eggs and vanilla. Mix in flour until thoroughly combined, then add oats and three types of chips. Drop unto ungreased baking sheets, and bake for 9 minutes or until light brown. Makes about 4 dozen.

  1. Ellery - these sound wonderful. My husband and one of his friends opened up a cigar shop and they asked me to bake up a variety of holiday cookies for their Christmas Eve - Eggnog & Cookies event. I was looking for something a bit different than the usual sugar cookies and gingerbread (though I LOVE gingerbread.) These look like the perfect fit.

  3. I always love to see your sous chef. What a sweetie! I'm sure there won't be any coal in her stocking this year. The cookies sound terrific. Yum!
