Sinfully Delish Peach Pie



I'm on a sweets kick this summer. I'm so sorry.

Okay, I'm really not. Sweets are fun. We shouldn't eat them all the time, but some desserts really dress up a barbecue. So do fruit salads and green salads and cheese platters.  But a dessert can really make the day.

One of my favorites is peach pie.

Right now peaches are at their peak. They might not be so good a month from now, so I couldn't wait to share a pie recipe with you.

Granted, I know our very own Ellery is the queen of pies right now (a well-deserved honor) but I have always made pies. Since I was a little girl. I used to go around the neighborhood selling my chocolate cream pies topped with chocolate chips.

As with most of my recipes lately, I will provide a gluten-free alternative (see below).

SINFULLY DELISH PEACH PIE 

INGREDIENTS:


5-6 regular sized peaches
1 cup sugar
1/4 cup flour
1/8 teaspoon nutmeg
1/2 cup butter
1 pie shell (frozen or freshly-made)
2 tablespoons brown sugar


DIRECTIONS:



Mix sugar, flour, nutmeg. Cut in the butter. Sprinkle half the mixture in the pie shell.



Blanch * the peaches and peel off the skin. Slice and arrange the slices in a circle on top of the sugar ixture. Cover with the remaining sugar mixture. Top with the two tablespoons brown sugar.


Bake 450 degrees for 10 minutes.
Reduce heat and bake 350 degrees for 25-30 minutes more.

It will be very hot. Let cool to room temp to serve. 



[My dad loved a slice of cheese with pie. Any kind of pie.  I now know why...]


* By the way, blanching...this means bring a pot of water to boil. Using tongs, dip each peach into the hot water. Hold the peace there for about 10-20 seconds remove. Let cool. The skin will peel over EASILY with a sharp knife!

Gluten-free alternative:

Gluten-free eaters have a tough time with pie. The pie shell. The fillers.  I really try to focus on how to make it easy for celiac people like me who have loved pie all their lives. I happen to like the Whole Foods gluten-free frozen pie crust, but Whole Foods also has a gluten-free pie crust recipe on their site. Here's the LINK.   Note: if you have NO problem with nuts, almond flour is great for giving bread & pastry recipes lots of substance and flavor!!

  4. This recipe sounded so delicious I made it today and took it to a dinner we were invited to. But it came out peach soup in a crust! I have a feeling the 1/2 c butter was overkill. What else? I used flour. Maybe tapioca flour has more setting-up qualities. It was tasty but the form left something to be desired, I'm sorry to say.
