Charmed Berry Hand Pies (or Mini Pie Mold Treats)

Sometimes it's tough to find really delicious produce during the wintertime. So here’s a recipe that you can make using refrigerated piecrusts and store bought pie filling. After all, even enchanted pie shop proprietors like to whip up easy and delicious little treats for loved ones without spending all day in the kitchen. Surprise your Valentine with a hand pie or pick up one of these mini pie molds (Ella Mae got hers from Sur La Table).

Mini Pie Mold or Hand Pie Recipe:

For hand pies, simply fold in half until edges meet. Ella Mae brushes egg on the edges for a better seal. Brush crust with egg and sprinkle finishing sugar over the top.Preheat oven to 350 degrees. Unroll two Pillsbury piecrusts. If you have a mini pie mold, cut two crusts with rims of both mold halves. To make your own mini pie or hand pie without a mold, use a 6” round cutter with a fluted rim.

Fill inner pocket with your choice of filling (Ella Mae used blackberry). If using mold, press closed to crimp pies.

Bake on cookie sheet lined parchment paper for 25-35 minutes or until crust is golden brown.

*If you have extra dough, make some cookies out of the piecrust.

My “chef in training” brushed hers with butter and sprinkled sugar and cinnamon on top and then baked them with the pies.

  1. These look really special and will be perfect for our Valentine's Day get-together. I bought a heart pie mold several months ago just because I really like the idea of a hand-held pie. I'll be doing heart-shaped cherry pecan pies & sprinkling sugar on the top.

  2. I am planning on Chocolate Peanut Sweeties. They are a peanut butter candy rolled in a ball, pressed onto a miniature twisted pretzel, chilled & then dip the peanut butter ball in chocolate. My other idea is Chocolate Billionaires which is a caramel, pecan, chocolate treat.
    I like your mini pies. I like to make a Cherry Pie for George Washington's birthday. This year I think I'll make them hand held.

  3. Ella Mae looks like she is having fun. I make little pies but I do not use a mold, I guess that makes them more of a turn over. I like the mold idea however. I have made Raspberry chocolate, white chocolate raspberry, apple, blueberry among others. Let your imagination run wild for all kinds of combinations :)

  9. I've had a hand-pie mold in my drawer for so long, and I've never used it because I was afraid I'd just make a huge mess. But now, I must try it out ... and Valentine's Day is the perfect time.

  11. I wish I had a pie chef in training around the house! I used to. My son was always a great cook. He probably wouldn't appreciate if I put up his photos, however. He was always a mess! But so cute. Love these pies! Thanks for sharing.

  16. Since I live alone I love the idea of a mini pie-just enough for me! But now I'm thinking of white chocolate raspberry and dried cranberry, pecan, chocolate pies. Thanks BusyMon and Sue, lol. I don't have a Valentine, but last night I went to a Valentine's chocolate tasting at a fantastic local chocolate shop. I bought some lovely chocolates including raspberry, raspberry/wasabi, lemon pepper, ginger, pop rock, sea salt caramels...

  21. Probably some strawberry 'pupcakes' as Lady K calls them, with plenty of strawberry frosting. Chocolate dipped strawberries for DH and me.
