Fall Pancake Fun from Cleo Coyle


Fall arrives this week*, and it’s brought my appetite! For the first weekend in a long time, Marc and I woke up craving carbs—and our favorite carbo breakfast is pancakes. In our highly populated Queens' neighborhood, pancake houses can look more like mad-houses on a weekend morning. The wait for a table can be as long as an hour. Consequently, I’ve worked on my pancake-making (and flipping) skills. What's that? You want proof? Okay, counselor, here you go, exhibit A is pictured above, a pretty stack of buttermilk cakes like the one, relatively round and even in thickness, with little to no mottling is easy to get if you remember a couple of tips for your batter viscosity, your griddle, and your pour. (I’ve included those tips in my recipe.)

  1. I made these pumpkin pancakes back in March, just before leaving for a writers' retreat on the Olympic Peninsula. The orange juice/powdered sugar topping was met with initial skepticism, but everyone loved how the flavor combination!

    Most pancakes leave me feeling pretty ooogy afterward, but these weren't too heavy at all. Two thumbs way up!

    So you want to know what my carbo breakfast consists of. Hmmm, well coffee is a must for me. As for food, I like pancakes and cheese stuffed french toast. However the occasional slice of cold pizza is not bad either. Yes I know some think that weird but ...

  5. These pancakes look wonderful! Too bad I don't eat pancake anymore.

    My favorite carbo breakfast was my Granny's pancakes.They were lightest fluffiest best things on a cold Texas (yes it does from time to time get cold in Texas) morning. I've never been able to make them the same way. Of course, it could be just because SHE made them. They are many things that she used to make (including coffee) that just don't taste the same when I make them. Of course she had well water and that made a lot of things taste better, but in the end I really think it was just something about her.

  9. My favorite carbo breakfast is a big bowl of grits with bacon and cheese mixed in. Yum! Pancakes are a very close second, and those pumpkin pancakes look delectable.

  11. Cleo - the sauce looks incredible! I love pancakes but gluten-free, so my favorite carb breakfast is my homemade GF banana bread slathered with cream cheese or mascarpone. A cup of decaf coffee (I know, I'm no fun at all, but I have "plenty" of energy without the caffeine kick...ask my husband LOL) and I'm good to go.

  12. I don't eat much other than high fiber cereal for breakfast but when I change it up it is for pumpkin pancakes. I LOVE THEM! In fact I love just about anything pumpkin :). Thank you.

  13. I love my waffle maker. The yeast batter waffles are a special treat that I should make more often. If I'm in a hurry I make a cinnamon roll loaf out of biscuit dough.

  14. I will be trying these this weekend! Well, I'll have my husband make these. He's the pancake master of the kitchen. Although, since I'm the waffle queen, I may experiment with the recipe for waffles. Thanks for the recipe..... Our favorite carbo breakfasts are pancakes or waffles, depending on the cook that morning. (I think I got all of the spelling errors out this this.) : )

  15. OK, those pancakes look really, really good. And I love anything with pecans in it...and butter...which is a food group of its own. LOL

    I love pecan waffles when I get a chance. Not too often, but occasionally. Yum!! Think that sauce would go very well.

    and I grew up with putting peanut butter and maple syrup on them! its awesome!

    I have been known to take a jar of my favorite brand of peanut butter with me to our local pancake restaurants ( to have on my pancakes)..and the Staff at the Restaurant usually knows "why" you have the peanut butter! LOL

  22. My husband is the pancake flipper in our household, and he does a good job. The butter pecan syrup sounds wonderful, but as I have to avoid excess carbs, I'll try the orange juice/confectioners sugar. It all sounds good!

  24. It depends on whether I'm in the mood for sweet or savory.

    For sweet, pancakes. We had white chocolate raspberry last weekend.

    For savory,wonderful baking powder biscuits with sausage gravy.

  25. I didn't pay a whole lot of attention in 9th grade Home Economics (and it was a long time ago) but one thing I have always remembered is how to tell if a pancake is ready to flip! This life skills class comes in handy on Sunday mornings when I feel the need for something warm & hardy to get my day started. Breakfast is the most important meal of the day you know! I think these Pumpkin Panckes will be on our menu come this Sunday since the first day of fall is coming up on Friday!
    My favorite carb breakfast is definitely pancakes! I can eat them hot, cold, lukewarm, with/without butter, with/without syrup - it doesn't matter - pancakes are just the perfect start to my day! Roll em up and put a piece of bacon in them and drizzle syrup over - YUMMY! I don't get them as often as I like but after seeing this recipe I'm anxious to try them out and maybe start cooking breakfast a bit more on lazy Sunday mornings!

  30. The pumpkin pancakes and sauce look so yummy! My favorite carbo breakfast is pancakes smeared with peanut butter, a fried egg on top and drizzled with maple syrup. Oh goodness, now I"m hungry.

  31. Oh my goodness gracious, you have my mouth watering! I could eat those for lunch and dinner as well. Also LOVE me some pumpkin bread. We have a great market around here that makes the best spicy pumpkin bread. Now....I'm off to read the end of Espresso Roast! Keep them coming!!!

  33. Favorite carb for breakfast...Hmm. That's super tough! I love my carbs just about anytime, but ESPECIALLY in the fall! I love anything pumpkin flavored, especially pumpkin pancakes and pumpkin muffins. Believe it or not, though, I tend to crave mushroom and spinach omelets with hollandaise sauce from IHOP (more than carbs) for breakfast! Teehee. But I'll stick with one of those pumpkin carb breakfasts (if I must!) ;o)
