Quick and Easy Back to School Cookies

blog23It’s back to school time here. My kids have their first day back…tomorrow.

And one of my babies is going into high school! How did this happen?! Time has flown by and I didn’t believe any of those people who told me it would. The days are long and the years are short. :)

I’m planning on having a little first-day-of-school debriefing tomorrow. But I have to be subtle with it or else the children will shut up like clams! What RileyAdamsFoodBlogPostpic_thumb_thumb[3]better way to gently find out information about their days than by providing them with a little milk and cookies?

Here are the cookies I’m making. These cookies aren’t just perfect for back to school, they’re actually wonderful before holidays…because you shut the oven off and leave the cookies in there for hours.

Easy Drop Cookies

2 egg whites, beaten
2/3 cup sugar
Pinch of salt
1 cup chocolate chips
1 cup chopped nuts

Preheat oven to 350 degrees. Mix all ingredients and drop by teaspoons on foil-covered baking sheet. Put cookies in the oven and turn the oven off. Let the cookies stay in overnight or for five hours.

IMG_20110823_210951Unfortunately, my cookies hadn’t quite stayed in the cold oven long enough, but I needed to take them out and take a picture before I turned in for bed! Hope it’ll give you an idea. They’re very tasty! :)

  1. Very easy cookies to make and they look very tasty with all those chocolate chips and nuts. Can I come over for cookies and milk after school, too?

    My sister is seeing her son go off to school this week, as well, but this time it's college. She'll have to *send* him the cookies. (Sigh.) I can still see little Alex being born. Now he's taller than his aunt. How did this happen? :)

    The years do indeed go by way too fast...

  2. These look like yummy cookies. What's not to love about a cookie you can leave in the oven and forget. Hope your youngsters have a fun first day of school. Our schools have been back in session for almost a month.

  4. Yeah, watching all those back packs marching by in the mornings makes me miss my kids (ages 24-26) and their first days of school.

    Debrief while you can, pretty soon cookies and milk won't even work

  7. Oooh! I love the idea of these. I think people would tell you anything you needed to know with the promise of treats like this. Hope the debriefing is fun all round. But how could it not be?

  10. Dru--I just preheat it until it reaches 350 (and the timer goes off), then pop the cookies in and turn it off. Seems to work out okay. :)
