No-Bake Peanut Butter Pie

When I was a little girl, I used to eat peanut butter and jelly sandwiches every day for lunch.

This was not because my mother wasn’t creative. She’s a wonderful cook and gets great culinary inspiration.

But I was one of those really, really picky kids. No school lunches for me! And nothing weird in my lunchbox…just PB&J.

If you think about it, the amount of peanut butter I consumed over the course of my education is really staggering. Smile The funny thing is that as soon as I graduated from high school, I decided to never have a peanut butter sandwich again (thus beginning my baked potato kick for college.)

Sooo…no PB&Js for me anymore. But I still love peanut butter in recipes.

Especially when it’s a no-bake recipe! Because I’m still in that crazy, October time-crunch where I don’t want to spend a lot of time in the kitchen.

Plus—we’ve had some really wacky weather here lately and, as I type, it’s 80 degrees and humid. Not exactly weather to make me want to turn my oven on!

So here it is—the No-Bake Peanut Butter Pie. And MMM! It’s good.

IMG_20101027_1625221 8-oz package of cream cheese (you could also use Neufchatel cheese.)
3/4 cup confectioners’ sugar
1 T vanilla
1 cup peanut butter
1 8 oz. container of whipped topping (thawed)
24 crushed Nutter Butter cookies
5 T butter or margarine

Beat together cream cheese, vanilla, and sugar.
Mix in the peanut butter and beat until smooth
Fold in whipped topping

Mix together crushed Nutter Butters and butter and press the mixture into the sides and bottom of a 9- inch pie plate. Put peanut butter mixture into the pie shell. Cover and freeze the pie until it’s firm.

You can put crushed cookies on top for decoration, if you like….mine isn’t as pretty as some. I’m wondering if that’s because I had children standing there waiting for me to be done preparing it!

Hope you’ll enjoy it! I was out of Nutter Butters (must have something to do with those Halloween ghosts from last Thursday. Smile ) It’s good with a graham cracker crust too…but Nutter Butters are better! And you don’t have to eat a huge slice like the one in the picture—that was on its way into my teenage son’s mouth!

  4. I love PB&J sandwiches. They're still a comfort food for me. My mom used to give me ham and pickle sandwiches for school (also still a huge favorite) but PB&J meant it was summer time. Always with orange Kool-Aid. Anyway, your pie is making my mouth water. I think even with my crazy schedule I could swing making one of these this week. The family will love it.

    Krista--He loved it, but it's rich, so he ate it slower than he'd thought!

    Babs--It's REALLY good...and rich. My son ate the whole piece, but it took him a while!

  9. THank you thank you thank you Elizabeth...we had a pie like this several years ago...Mr. Nanc loved it and I got the recipe. Of course who knows where that piece of paper ever ended up?? I have tried to recreate it several times and tried many different recipes but this is the one!!!!!! Another beauty of it...I'm not a peanut butter fan so for once I'll just eat an apple!! On the other hand if I made it with Nutella....hmmmmmmmm :-)

  10. here's another version:
    1 chocolate Redi-crust
    6 oz. cream cheese, softened
    1 cup smooth peanut butter
    1/3 cup milk
    1/2 c. sugar
    4 oz. Cool Whip
    beat cream cheese, peanut butter, sugar, and milk together. Fold in Cool Whip and pour into crust. Freeze 3 hours. Remove 10 minutes before serving and slice. Plop a spoonful of Cool Whip and squeeze some chocolate syrup over each piece. Good stuff!
