Even More Bacon and Tomatoes

RileyAdamsFoodBlogPostpic_thumb_thumb As I mentioned last week, my apparent obsession with bacon and tomatoes continues. No, I’m once again not providing the healthiest of recipes. But, boy, this is a yummy sandwich. And it’s got olives in it, which is another ingredient that I’ve been eating tons of lately.

This blend is on my heavy rotation list for sandwich fillers. I love the combination of the green onions with the olives. Add bacon and tomatoes to the mix, and what could be better?

Cheesy Bacon and Tomato Sandwich

1 1/2 cups shredded cheddar
3 oz softened cream cheese
3-5 T sliced green onions
1 small can sliced black olives, drained
1 T mayonnaise
2 t mustard
10 chopped Roma tomatoes (or scoop out several regular tomatoes)
10 slices of cooked and crumbled bacon

Preheat oven to 350. Combine the ingredients and spread them on the bread. Place on a baking sheet in oven for 5-10 minutes (depending on the thickness of your bread) or until heated through.

It’s also great as an open-faced sandwich on a thick bread like French bread or sliced sourdough.

If y’all are lucky, maybe I’ll have gotten over my bacon obsession by next week and move on to something healthy. :) Of course, you can always substitute turkey bacon, exchange the mayo for low fat mayo, and use American Neufchâtel instead of cream cheese to make it a little bit healthier.

  2. This is definitely a new twist on the bacon/tomato sandwich I had in mind. This looks delicious. It would be great looking on a leaf of lettuce as a salad. Looking forward to trying this one.

  3. Oh no don't give up bacon I love these recipes and bacon is like woman's best friend ok after chocolate ha. I love everything in this recipe so I have got to try it this weekend. Why do I torture myself and look here before I eat breakfast :).

  5. Oh, that looks great -- and I like Mason's idea of eating it sans bread. I'm going to try this as a sort of "BLT" version of a classic taco salad. My husband, however, will absolutely go crazy for this on slices of fresh Italian bread. Thanks for the inspiration - and I hope you're well out of the way of Hurricane Earl. The storm is tracking to hit NC tonight and it's coming up our way tomorrow. We're in Queens (technically the west end of Long Island) and if the storm shifts its track, we could be in Oz by Saturday...

  6. A Year on the Grill--And the olive really makes it, I think. I've made it without it before...but it wasn't nearly as tasty.

    Mason--What a great idea! I think it would make a really tasty salad. I'll have to give that a go.

    Babs--I think it's sort of like going to the grocery store...we need to go full! I'm like you--I need to look at Mystery Lovers' Kitchen after I've got a full tummy.

    Cleo--The funny thing is that it's such a GORGEOUS day here! I guess it's not that pretty on the North Carolina coast, though. I think you actually might get much worse weather from the hurricane than I will...hope you don't, though! And I hope y'all will enjoy the bacon and tomato spread. :)

    I think I know where that olive craving came from. I've been suffering from it, too, because Molly Weston served us the *best* brined olives. I haven't found any to match them around here, but I find I'm craving olives and snacking on them, which I never do!
