Too Hot to Bake Oreo Ice Cream Cake

I went to a fun party last week—lots of my friends were there and it was great to have a chance to catch up and see how everyone’s summer was going.

We all brought food to share, which was fun because it gave us all a chance to sample different kinds of food. And it was scrumptious—from entrees to hors d'oeuvres, to desserts.

I was having my a/c units and furnace replaced, though. My ailing units had finally bitten the dust and the installation of the new equipment was a three day process.

So turning on the oven when it was already 95 degrees in my house? Not an option.

And, really, all I could think about was something cool. Cool—like frozen. That’s when I pulled out my recipe for…

Oreo Ice Cream Cake

1 large package of Oreos (crushed)
1/2 gallon of softened vanilla ice cream
chopped pecans (I used most of a small bag)
1 carton of Cool whip (I softened it a little to make it easier to spread)
Chocolate syrup (as much as you want. I probably used 3/4 of a cup)

Place the crushed cookies in the bottom of a long pan or dish. Spread the softened ice cream over the cookies. Spread Cool Whip over the ice cream for the next layer. Sprinkle the nuts over the Cool Whip, then drizzle with chocolate syrup. Keep in the freezer until ready to serve.

It was a hit! And I didn’t even have to turn on the oven. :)

  1. Oh, you're killing me. That looks amazing, Elizabeth, and up here in steamy, sticky New York, we would devour that baby in one sitting. Here's hoping cool, crisp fall days are quick in coming. And thanks again for the Roast Mortem shout-out. You're the best. :)

  2. Oh Liz... These posts are killing me.

    Here on the island, they have everything...

    With a pink hotel, a boutique, and a swinging hot spot
    Don't it always seem to go
    That you don't know what you've got till it's gone.

    But, without a big yellow taxi, charging me twenty-five bucks just to transport it, ice cream is an impossible dream. It's about an hour from freezer in the store to freezer in my condo away from home.

    The one thing that is all but impossible is the one thing I am craving most for when I get home. Great timely post.

    A Year on the Grill--Got a paved paradise there? :) I know what you mean about the ice cream--it gets sloshy on the way home here and it's just a 5 minute drive! Oh well...just think about how delish that ice cream will be when you finally get some in KC!

    Mason--And they DO continue to soar, don't they? I was wondering why I was being tortured by having to have my a/c replaced in the middle of this heat wave!

  5. This has been a hot summer, but it's been so long since we've had a *real* summer around here that I'm enjoying the heat. Yeah, really. That doesn't mean I'm eager to turn on my oven, however.
    This is a perfectly wonderful dessert for these dog days of summer. Just exactly perfect, E.
