Down-home in a Hurry—Cheesy Broccoli Cornbread

RileyAdamsFoodBlogPostpic_thumb_thumb

Sometimes life feels like it’s hit the fast-forward button, doesn’t it?

Today is my children’s last day of school before summer vacation. And I’ve been scrambling around like a chicken with my head cut off. :)

Last week I was in a hurry, too! So I ended up making Apricot Chicken, which is also quick and easy. This cheesy broccoli cornbread is just the ticket for an easy side dish for that, or any meal.

I’m thinking that as soon as these children are out of school that I’m going to have some lazy summer days with them. We’ll go out and eat honeysuckle right off the vine, wade barefoot in the creek, and pick tomatoes right from the backyard. Or…am I just dreaming? :)

Cheesy Broccoli Cornbread

014

1 box commercial cornbread mix (or 1 1/4 C. cornmeal mix)
10 oz. frozen, chopped broccoli (thawed…which I did courtesy of the microwave)
2 cups grated cheese (you could use cottage cheese, but I love cheddar)
1 chopped medium onion
1 stick melted margarine

4 beaten eggs

Preheat your oven to 400 degrees. Mix all the ingredients and pour into a greased Pyrex dish. Bake for 30 minutes (my oven runs hot, so it was a little less) or until toothpick inserted in center comes out clean.

So it starts like this:

006

and ends up like this:

014

Yes, that’s it! Just mix, pour, and bake. And it really does taste delicious, y’all.

  3. Riley, hope your lazy days of summer come soon. They sound just wonderful -- very Tom Sawyer!

I'm always amazed by the versatility of cornbread. Never, ever, would I have thought about hiding broccoli in it! You're such a clever mom!

  5. Mason--I hope so, too! Right now I've already got my kids' friends in the house. :) Ahh...we're off to a fast start!

Avery--All kinds of food groups in one!

Krista--I'm thinking that there are OTHER things we can put in cornbread, too. I'm going to have to play around with it.

Julie--Thanks! Hard to believe it's already summer!

  6. OH!! Broccoli is one of my favorite vegetables. Cornbread one of my fave treats. This is awesome, Elizabeth -- and easy. Always a good thing.

Thank you also for that lovely word-painting of a sunny, lazy, pastoral summer...I remember summers just like that, growing up in Pennsylvania. It's the sweetest, isn't it? And why do I think it's more likely you'll be attempting to get work done while watching your kids at a loud, crowded pool; sweating over hot, sticky grocery trips; and juggling time alone to write the new chapter? Yes, dreaming is better! :)

Only a few weeks more to the release of your first Memphis BBQ Mystery: DELICIOUS AND SUPICIOUS! Woot! Can't wait!

  8. Cleo--Writing at the pool! That'll be me this summer for sure! Pennsylvania sounds like a great place to grow up. :)

    Jenn--Jazz it up. It's fun!

  9. I'm originally from NY so, by law, I'm not allowed to make cornbread.

I remember eating honeysuckle! It grew wild in the lot across from our house. I was very sad when they built houses and took down the vines. I still love the smell.
