Chicken Stroganoff—in a Slow Cooker

We’ve had a heat wave here for the last couple of weeks—it’s been one of those things where I haven’t been able to bear turning the weather on because the weathermen tell me it’ll be just as hot for the next seven days. Whew! And the humidity is just unbelievable.

Unfortunately, we’re also about to have to get an entire new air conditioning system in our house. Ugh. The units are twelve years old and seem to be on their last legs. So it’s just a little bit warm downstairs.

What’s a Southerner to do? Pull that Crockpot out from the cabinet! Yes, usually I associate slow cookers with cold weather because soups and stews are so easy to make in them. But really, the whole point is that it cooks slowly—and without projecting more heat into my kitchen!

In the interest of keeping everyone’s kitchen just a little cooler, I’m offering up:

Crockpot Chicken Stroganoff

You’ll need:

Chicken breasts (you could use thighs, if you wanted)
1 can cream of celery soup
4-6 oz. sliced mushrooms or 1 can sliced
1/4 cup cooking sherry
1 package dry onion soup mix
paprika to taste
8 oz sour cream (stirred in 10 minutes before serving)

Sprinkle chicken with paprika. Lay chicken at the bottom of the Crockpot. Combine other ingredients and pour on top of the chicken. Cook for 6-8 hours on low. Serve over rice (and I’d recommend making the rice in the microwave.)

Easy and cool for a summer day!

004Or… use your Easy Bake Oven. :) My daughter wanted to do some cooking, so Easy Bake was the way to go. Nothing like cooking under a light bulb. Boy, that cake took a while…

  2. Despite the fact that we've been pounded with rain just about every day (plus yesterday's tornado warnings) it's been pretty hot here too. Hot enough to keep me indoors most of the day. Good thing because I've got a book to write! I've been using my slow cooker to keep from having to turn on the oven. This is a great new recipe for me. Thanks!

  3. HEAT! Oh, yes, we're hot and sticky here in NYC, too. And a crockpot meal is a very clever idea for keeping things cool. Love your recipe -- especially the sherry and the cream of celery soup. (Celery is such a great flavor.) Grinning over the cooking-with-the-light-bulb Easy Bake Oven - man, that brings back memories! (Also reminds me of the Seinfeld episode when Jerry and Elaine "drugged" a friend with a turkey and wine dinner just so they could play with his vintage toys. Yes, Elaine wanted to play with his Easy Bake Oven. Nice to know it's still around. :)

  5. I love my crock-pot too. I think it might be my best friend. Nothing like knowing supper is ready when you walk through the door at 5:00. And I cannot wait to try this recipe - it sounds scrumptious!!!!

    I hope your air conditioning is back up soon. The heat hasn't been too bad, but sheesh, the humidity is enough to make me want to crawl into a cave. You're so right about ovens heating up the kitchen.

    I've stashed my slow cooker away for the summer, but I may have to drag it back out now!

  11. Krista--Thanks! You know, you hate to spend the big $ on something like *air conditioning* (and not something much more fun), but in the end (and when it's this hot), boy it's worth it! But in the meantime my slow cooker and I will be the best of friends. :)

  12. Is there a way you ladies could add a "print this" option to each post? Sometimes I want to print out a recipe, but I don't want pages and pages of the blog! And I'm too lazy to write out this good recipe for chicken stroganoff. But it sounds delicious.

  13. @Judy, one thing you can try is to copy and paste it to a word doc or to Ipage, if you have Mac. That's what I just did. It only took up a quarter of the page, so I have plenty of room to add another one to the page, which saves me paper! Just something to try.
