A 200 gram sweet potato contains 769%
of your daily vitamin A.
If your kids are like
mine, this is not a selling point. Neither is the

65% daily vitamin C count. In fact, this information

is greeted with as much enthusiasm as cleaning
their room, doing their homework, or shutting off

the television, but I digress.

Here's how I get my dudes to partake in my love
of sweet potatoes. Simply, boil these taters, mash them up and pack them
around a large marshmallow. Now they're reconsidering. Okay, so it's a little more
complicated than that, but you get the idea. Sweet Potato Balls are a wonderful way
to use this vitamin rich vegetable. Not only do my boys eat them, but they demand
seconds. Sadly, I can't do much about the other issues like cleaning and homework.
You're on you're own there.

Sweet Potato Balls

3 cups sweet potatoes, cooked and mashed

¼ cup butter

¾ cup brown sugar

2 tbspns milk

¼ tspn salt

1 tspn lemon zest

2 cups shredded coconut (or corn flakes

if you're not a coconut person)

Mix all of your ingredients (except coconut

or corn flakes), shape into a ball around a

large marshmallow, roll in coconut (or corn

flakes). Bake at 350 for 20 min.

Be sure to watch the oven for the last few

minutes of baking. The heat causes the

marshmallows to expand and they might explode.

The dudes love the element of danger in that

as well!

ENJOY!

  1. Jenn, you deserve some sort of prize for being the first Mystery Cook to provide the possibility of exploding food. I am ROTFL. No kidding though: For concoting a way to get the excellent nutrition of sweet potatoes into your kids without complaint, this recipe is worthy of a "Sneaky Chef" award, too. (BTW - Congrats on your Lucy Lawrence mystery publishing this month, STUCK ON MURDER!)

What a fun recipe! I confess our family isn't terribly keen on sweet potatoes, but this one is worth a try! Thanks!

  4. Right now I'm the only person in my family that likes sweet potatoes. I've seen versions of this recipe before and I think it might convert my daughter, at the very least! Plus the explosion part might intrigue my picky son :)

  5. I never liked sweet potatoes until my dogs started eating them. Now I make baked sweet potato chip snacks for them. This recipe sounds delightful! I'll have to try it!

  6. Oh my GOODNESS, this looks good. I gave the kids sweet potatoes last night, but they weren't EXCITED over them. This would really get them to cram it down! Thanks for sharing your explosive idea.

  11. Sounds like a fun recipe for kids. They'll love helping make them. I prefer my sweet potatoes with just butter, salt and pepper.
